Broccoli Cheese Soup

This was the best broccoli cheese soup I've had in a long time. Made it exactly as said. Even though it was great, I think next time I'll replace a little broth with a bottle of beer just to perfect it!

Easy Apple Crisp

I was very skeptical with the shortcut of cake mix. Have grown up on "from scratch" baking and apple crisp was always perfect. Tried this and my family absolutely loved it. I've always been one to favour alot of "crisp" and less apple, but this was too much crisp to apple ratio. Next time I'd double the apples and it would still be plenty sweet and crisp! Delicious!

Beef Barley Vegetable Soup

This was a hit with my family. If you like a really chunky soup that has very little broth, this is the one for you. After dishing out to my 4 family members, I quickly realized that I was left with half a pot of solids and no broth left, so I dumped it all back in and added another 2 cups of beef broth. Didn't do the mixed veggies... just threw in whole mini carrots and by the time soup was done, our spoons could just cut through them. So much easier than chopping! I also threw everything in right from the beginning except the barley. That only needed adding for the last 2 hours.

Chocolate Cavity Maker Cake

This is ridiculously moist and dense. So delicious it's crazy. Don't expect a light fluffy cake... expect a coffee cake consistency and alot of richness.

Zucchini-Chocolate Chip Muffins

very very moist and yummy. first time, left the skin on but that only cued my toddler into the fact that they must be healthy therefore yucky! next time peeled the zucchini so that he'd never know. be careful though... if you pack your zucchini in the measure, you'll use too much and they'll have a little too much moisture to keep their texture. very yummy and will use over and over again!

amazing muffins!! dear daughter made these both with and without chives... the chives truly add an important flavour. i'd say if you don't like chives/onions, maybe replace it with fresh dill? excellent recipe... a keeper

Hot German Potato Salad III

used new baby potatoes with skins on (super easy cause you don't have to slice them at all!) and eliminated the celery seed because of family preferences. this was definitely the HIT of the bbq and everyone wants the recipe now! i'm reluctant to share it because its so easy and amazing i want to keep it for bringing EVERYWHERE!!

Double Tomato Bruschetta

hmmm... well i'm not sure what to put here because i've NEVER seen a recipe that's held its 5 star rating with so many reviews! but, there is a but. not sure that i love the heavy balsamic taste to this one. i used tomatoes from my garden...2 different varieties because i didn't have sundried. i love bruschetta and i think all the flavors in this recipe would be amazing but they were so masked by the balsamic that it was hard to tell.

Oven Meatball Stew

this was VERY tasty - the tomato base was deliciously tangy. i found that the meatballs were falling apart alot when i browned them but (likely for the same reason) they were super tender. think this would be remedied simply by browning them in the oven rather than trying to stir them around in the pot. didn't have tomato juice on hand so used the same measurement and substituted tomato soup. very yummy. eliminated the chopped peppers and onions from the meatballs because of the kids, but added large chunks of green peppers and onions to the stew.

Raspberry and Almond Shortbread Thumbprints

absolutely delicious! i used real butter and so it's a given that the cookies will spread more than if i used marg. worth the taste though. stuck in the freezer for 10min pre-bake and they turned out quite nice... not a single one leaked jam.

Peanut Butter Marshmallow Squares

a classic. as previously mentioned, should be no nuts, no coconut - thats just wrong! my preference is... use half butterscotch chips and half chocolate chips. gives it an awesome flavor. these are definitely the hit of my christmas baking with both the kids and the adults.

Chocolate Rum Balls I

not sure why i'm not loving these, considering the amazing ratings they get. i'm guessing it's because i had to sub graham crumbs for the wafer crumbs. same texture but maybe different flavour? these are not at all what i remember from childhood - found them to be very dry and the rum was quite potent. i love rum but still found there to be quite an afterbite.

Judy's Strawberry Pretzel Salad

i'm giving this 5 stars for the sheer yumminess of it - which is what the rating system is for! BUT i also want to mention that this is so close in flavor and sweetness to a cheesecake that it is a little much to be used as a sidedish jellied salad. seriously, my entire family thought that someone had put the desert out too soon.

Broccoli with Garlic Butter and Cashews

this was alright. i found there to be way to much liquid (sauce) for the broccoli and it was extremely salty and strong. double the broc or half the sauce and it's a much more subtle, enjoyable dish. because this was listed in holiday recipes, i used it for thanksgiving dinner and it was awkwardly out of place - it's definitely a chinese type dish... not great for a turkey/stuffing sort of meal.

Pumpkin Pancakes

these were the tastiest pancakes i've ever had! by the time you add maple syrup on top they taste just like pumpkin pie. as other reviewers have suggested to NOT think the batter, i tried it exactly as is. i was very skeptical because it was so thick but as long as you let them cook for a decent time on each side, they turn out nice and fat and fluffy. i'd say if you're going to thin the batter do it very minimally. excellent recipe ruth - thanks!
