Mustard Vinaigrette

I think making salad dressing for guests shows that you appreciate their company, I wanted something that would go with a bag of spring mix salad. I used half canola oil and half olive oil, I reduced the salt to one and a half teaspoons. You can always add, but can't remove. It was great, I will make it with a coarse grind mustard next time just for contrast.

Baked Chicken Nuggets

just made it last night, I was going to get a bag of Tyson strips, but didn't want to pay $9 for 26 oz. and Chicken Breast was $1.77/lb. As others have said, there is a lot of salt with the butter and parmasean cheese, so I would cut the salt in half. I might also try to use an egg instead of butter next time to take out some of the fat. I turned the nuggets over about halfway through and they became crispy on both sides. Make the nuggets yourself and save a fortune, for about $5 and my prep time, I was able to make almost twice as many nuggets as in the Tyson bag.

My Best Clam Chowder

This came out perfect, it is a great cold weather dinner with a loaf of bread and a salad. Don't overcook the clams as they will get tough. A keeper of a recipe. Thanks!

Albino Pasta

This is a side dish not a main and like others, I decided to modify it to my tastes and add some things that I had on hand: Asparagus, more garlic, salt and pepper, and a little italian seasoning. I will make this over and over again because I often need a side dish to accompany a protein and this one's a winner as it can accomodate other ingredients that you have available such as bell peppers, yellow or green squash, broccoli, plum tomatoes, carrots. This will replace the overly-salted and procesed Lipton/Knorr pasta sides that I have been buying for years.

Salmon Fillets with Mustard Glaze

one of the best recipies I've made, perfect for a quick and simple yet special weekday meal with a few ingredients that I had on hand. I didn't have any chicken broth, so I used vegetable boullion cubes, and didn't have country dijon, so the regular dijon works fine. I probably overcooked the salmon during the searing process, so I will cut the time down by a few minutes. The glaze was great.

Sweet Restaurant Slaw

the only cole slaw recipe you'll need. I used apple cider vinegar and cut down the sugar a bit and used mayonnaise since I didn't have any Miracle Whip. Every time I serve this to company, I am asked for the recipe.

Caesar Salad I

I have made this recipe several times and it is always a big hit with our guests. I have reduced the mustard to 1/4 teaspoon and also use a big squeeze of anchovy paste (1 to 1.5 tablespoons) in place of the whole anchovies. Use fresh grated or shredded parmesan, don't use the canned stuff in a "green tube" Finally, if you don't have a fresh lemon, use RealLem lemon juice, it works for me. An hour after dinner, you will attack the leftovers, its so good!
