About this Cook
I work as an editor, and I live with my DH, his son and our dogs. The dogs are huge fans of my cooking and often hang out in the kitchen with me—especially if I'm making chicken. However, they is very lazy and has always seemed uninspired when it comes to kitchen clean-up.
My favorite things to cook
I prefer natural, organic food (when possible). I tend to avoid anything processed or bottled. I make all salad dressings, seasoning blends and sauces from scratch. Food tastes better and is better for you if it's fresh and homemade. I tend to make healthy, well-balanced meals without relying on low-fat versions of anything. I like real food, and if you use things in moderation and balance, you can eat whatever you want. :o)
My cooking tragedies
For the longest time, I couldn't make pancakes without burning the outside while leaving the insides raw. It was pretty frustrating, because we LOVE pancakes. I finally figured it out, though. My biggest cooking mishap occurred last Christmas. I was baking my favorite cappuccino biscotti to give as gifts. When I tasted one of the cookies before dipping it in chocolate, I realized I had forgot to add the sugar. :o)

Peanut Butter Cupcakes
If I could rate these 4.5 stars, I would. I've made them twice—once as written and once replacing the shortening with oil (I used grapeseed because it's tasteless). Why the switch? I always find that any cake or cupcake other than pound cake or some other dense cake is lighter, moister and fluffier when I use oil. I generally use butter for all my other baking, but oil seems to work best for me in cakes and cupcakes. These taste great topped with Rich Chocolate Frosting (add some peanut butter) and topped with a teeny, tiny PB cup (I buy them at trader joes). Everyone loves these. xoxo

French Breakfast Puffs
These are delicious!!!!!!!!! Sometimes I use buttermilk in place of the milk. Oh, and most French puffs are covered in the cinnamon sugar; not just the tops. So I roll them around in the melted butter then cover the whole muffin in the cinnamon sugar mixture. So yummy. :o)

Dee's Roast Pork for Tacos
Wow this was tasty! Such a nice change from chicken tacos. I used a pork loin roast cuz that's what I had, and I reduced the recipe because there are only three of us. The only changes I made were based on other reviews, so I added a little stock, some cumin and some tomato paste. So good! I wrapped my roast in foil, then placed it in a covered clay pot to bake. Perfection on a corn tortilla. Yummmmmmmmmyyyyy!
