My cooking triumphs
Most recently was making a batch of tamales from scratch for Christmas
My cooking tragedies
Most recently an attempt to make leftover turnover filling into a soup and in the process of also blending in leftover tofu ended up with a most unappealing soup.

Curried Tilapia with Mango Salsa
This is my go-to recipie for tilapia. I've tried it with several variations. The salsa is the most labor intensive part so at times I've made a double batch and then freeze 1/2 of it. If you have the time char the serrano chile and red onion a bit, I also throw the salsa in a blender. I generally also add some unseasoned breadcrumbs to the fish to give it some more crunch and will often bake it, flipping once about halfway thru. I enjoy serving it with couscous, excellent salsa and good tilapia recipe.

Easy Cream Cheese Danish
I liked the idea of a quick and easy danish recipe but the end result was nothing like a flaky, delicious, baked good I was craving. Next time I'll start from scratch to hopefully get a better result.

Pepper Rice and Confetti Beef
The beef and peppers were colorful, but would benefit with something either sour or spicy. The green onions in the rice were good but the chicken stock didn't add much flavor and that will be the last time I use the stovetop to cook the rice as it burned some and undercooked other parts.
