Apple Crumb Pie

Yum! I had some apples I needed to use up. Since they were a sweeter variety (I usually use Granny Smith for pies), I cut way back on the white sugar that is mixed in with the apples. I was worried about it being too runny, so I made sure to let it cool completely. It was just right. My husband ate over half of the pie himself!

This makes a lot of food, but it's delicious and freezes well. Healthy, too! We love cilantro, so I threw plenty in.

Easy Mint Chocolate Chip Ice Cream

Wow. This recipe is fantastic. The only changes I made were to substitute 2 ounces of shaved high quality dark chocolate for the choccolate chips, and to cut back on the salt. I served it with a dark chococlate cake for a friend's birthday. Everyone raved, and my husband requested that I make it for his birthday this weekend! Don't let others sway you - use the peppermint extract. Other minty flavors would not be anywhere near as good. Update - I made this again, but with crushed oreos instead of the chocolate. Mmm, mmm, mmm. Both ways are great.

Vanilla Cherry Ice Cream

Mmm Mmm Mmm! Thank you Shay for a recipe that uses fresh cherries! Based on previous comments, I did cut the cherries in quarters and used just over half a teaspoon of almond extract. My friends raved about this ice cream! When I make this recipe again (and I WILL make it again), I'm going to cut back on the almond flavoring even more (maybe 1/4 tsp) and add an ounce or two of high quality dark chocolate - shaved. It will taste a lot like Ben & Jerry's Cherry Garcia. Yum!

Chili I

This is an awesome chili! It has a nice, rich flavor. I wouldn't cut down on the sugar one bit. The sweetness offsets the heat of the peppers perfectly. I used two cans of kidney beans, a can of black beans, and a can of pinto beans. I also left out the serloin. Otherwise, I made it exactly as written, and it was fabulous. For the peppers, I chose two anaheim peppers and two jalepenos. This chili goes great with cornbread!
