Butter Cream Frosting II

Great recipe. It has a strong powdered sugar taste. Next time I might lose a half cup powdered sugar and add a bit more butter. But the boyfriend loved it. I was pleased that even though my butter was too soft (left it on the hot oven to soften again) the icing didn't seem to mind. Thick enough that it gave great coverage but went on smooth too. I had plenty to slather on my cake.

Spaghetti Pie II

I love this recipe, but I am a low maintenance, jar of this, box of that type cook. I use pasta, sauce, eggs, ricotta, butter, parmesan, mozzarella, and ground beef. I used three eggs. Be sure not to mix them too quickly with the hot pasta or they will scramble. After making that mistake once I learned to temper the eggs first with a little pasta at a time. The egg makes the pasta taste so hearty…yummy! My mom used to make this all the time in her big 13 x 9 glass pan…memories.

Hot Shredded Chicken Sandwiches

My boyfriend and I enjoyed this recipie. Great for a cold, wet day. I did not have any crackers so I used stove top stuffing. Reheated well the next day too. I'll probably make this and put it in a crock pot for a fall pot luck.

Never Fail Biscuits

I never thought I could work with dough that wasn't "just add water" Thank you so much for posting this recipe! I fought the urge to over work the dough and they fluffed up to my satisfaction. I used the good old Kitchen aid for mixing and a drinking glass to cut out the biscuits. Boyfriend approved!

Real Sopapillas

When I searched out this recipe I was trying to duplicate the sopapillas served at a Mexican restaurant chain called Don Pablos. I've had "real" sopapilla's in Mexico and all over the west/southwest and their version is the only kind I like. I guess it's my junk food upbringing, but this dough was a big disappointment for me. It was so bland no amount of powdered sugar, honey, honey butter, vanilla ice cream, or cinnamon (yep, I tried them all) could save it for me. They prepared and cooked just as was promised. I didn't have any problems with puffing etc... They were just so bland I felt like I was eating vanilla ice cream and communion wafers. I realize bland pastries and crusts compliment sweet sauces and filings, but my palette wasn't having it. So if you're like me and you prefer glazed donuts to cake ones, cookie crumb crusts over traditional lard ones, and cool whip over meringue then make a funnel cake instead.
