Roasted Cauliflower Soup

Reviewed: Mar. 26, 2011
This is a great recipe as-is. As originally created it is wonderful but a little bland for my taste, so I did modify the recipe a little to my likes, I added 1 yellow bell pepper, I used white pepper vs black pepper for appearance purposes and I like the taste better of white pepper. I also added some curry powder and celery salt. Instead of using chicken stock I used the water and added chicken granules for the basic same effect. I also added some fried tofu garnishes as well. This put the soup over the top in my book.

Entertaining Pork Chop Dinner

Reviewed: Jan. 31, 2011
I invited some friends over for dinner and needless to say they were VERY impressed. They used words like WOW and I knew you were a good cook, but the flavors of each of the dishes melded together to form an impressively complementary taste sensation. I used the Creamy Bacon Dip as the dressing for the salad. As I stated in the pork chops I cook the rice per my notes and spoon the veggies with the sauce over the rice. The Macky cheese is great by itself but complements the rest of the meal. And to complement and bring your guests over the top hot apple pie out of the oven, and if you really want to push some buttons add a scoop of vanilla ice cream with cinnamon/apple topping. Again I will repeat I only use this recipe for company when I want to WOW them out of their socks, IT IS NOT LOW CALORIE, but the taste is off the charts.

Lisa's Slow Cooker Chuck Roast

Reviewed: Aug. 14, 2010
I tried to edit the recipe because I modified the recipe and forgot a step. First add the carrots and potatoes after 3-4 hours on high, and then turn down to low for the remainder of the time. Second, when you take some of the juice to thicken the gravy, skim the fat that has collected on the top of the pot, so you have a better tasting gravy and trims the fat some, and do this toward the end of the cooking time. If you wanted to add cream or sour cream to up the calories and increase the flavor you would do it at this time.

Grilled Chicken Kabobs

Reviewed: Jun. 7, 2010
Very good recipe, I followed it exactly and was very pleased with the results. For me it had a nice blend of heat and seasoning. I used my BBQ skewer set that rests above the grill and it came out perfect. I will make this again. Thank you for the recipe.

Spanish Rice Bake

Reviewed: Jan. 24, 2010
very tasty. I used 1 cup onion, 2 tablespoons minced garlic and 1 green bell pepper and cooked them with the meat. I also seasoned the base mixture (meat, onion, garlic and bell pepper) with salt, pepper and the cumin. (I used 1 teaspoon cumin) In addition I used 1 cup salsa. While cooking there was not enough water so the total amount of water I used was almost 2 cups. This was definitely a crowd pleaser as I used it for a church potluck and it was finished fast. I received a lot of compliments. Definitely a keeper.

Egg and Sausage Casserole

Reviewed: Jan. 24, 2010
Very easy and very good, I added some Lawry's season salt to the egg mixture and it was good. Next time I might add some finely chopped onion, mushroom and broccoli to the egg mixture, but it is very good as is.

Mom's Best Meatloaf

Reviewed: Sep. 15, 2009
I followed the recipe and the flavor was good but needed a little bit more, it was too heavy on the breadcrumbs. Instead of tomato juice I may next time try V8 spicy juice, a dash more of liquid smoke and use a mixture of beef and pork. I may cut the bread crumbs down to 1/2 cup and increase the meat to a pound and a half.

Fresh Asparagus Risotto

Reviewed: Sep. 15, 2009
I followed the recipe to the letter, it needs a little more flavor, maybe next time I would use all stock and no water. Very nice risotto. I used larger asparagus and peeled them before I cooked them and it was very nice.
