Henry and Maudie's Oatmeal Cookies

These were great! I did cut back on the sugar to 1 cup only of raw sugar (so I felt okay giving them to my toddler). They were not too sweet and made for a nutritious snack. I also used 2 1/2 cups oats and 1/2 cup flax seed to add another boost of omega 3s.

Creamy White Layers

A delicious cake! I made it for my husband's birthday, baked in the Cookie Monster pan that he had for his 1st birthday, and it was a hit. The whipped cream definitely sets it off. I think if a thicker, sweeter frosting were used it would be too heavy.

Homemade Cereal

Makes a tasty breakfast. I used dried cranberries and almonds instead of dates and pecans. Also reduced the sugar by 1/3 because it was plenty sweet with that.

Strawberry Rhubarb Coffee Cake

Very good coffee cake. The next day I'd pop a piece in the microwave for 20 seconds and top with vanilla ice cream. Very yummy! I think I may have overcooked it a bit, as it was drier than I'd like, but it was probably my fault.

Dutch Babies II

Very good basic recipe. I used whole wheat flour, and didn't dust with confectioners sugar. Instead, I mixed 1/2 cup frozen blueberries, 1 tablespoon of corn starch and two tablespoons of honey and simmered for 15 minutes as a topping. Very good!

Brown Sugar Oatmeal Pancakes

These were fantastic! I'll be making these from now on. I used all whole wheat flour, and raw sugar instead of brown sugar. I also didn't have buttermilk, so I used another's suggestion and used milk and 1 tbs vinegar. Topped with pure maple syrup, they were delicious. My son loves them too (he's 1).

Raisin Carrot Cake

I made this for my son's first birthday, and while I didn't have any (I don't like raisins), he loved it. Also, my mother-in-law would have gobbled up the whole thing. She said it was very good.

Whole Wheat Blueberry Pancakes

I used 2 tbs of sugar instead of an artificial sweetener. They were quite good, but I'm going to keep looking and trying for an ideal whole wheat pancake!
