WHIPPED SCOTCH COOKIES.

Simple and delicious, and I love that it came together in just minutes. I halved the recipe and it made 36 small cookies. I don't have the red and green cherries so I'm going to drizzle melted chocolate over the tops to finish. I just hope there will be enough, after we are done stuffing our faces, to go into our Christmas cookie tins for the neighbors. Thanks for a great cookie recipe Manella!

Easy Cashew Sea Salt Toffee

I just made 3 batches of this wonderful stuff to take to a holiday cookie exchange tonight. It's so foolproof and delicious, I almost regret that I came across it... I want to make it all the time! I tried it the first time about a week ago and I used my square 8x8 Pyrex baking dish and it cooked unevenly; I had one corner that burnt a little. It was still awesome, but lesson learned. Today I am using my big 4-cup Pyrex measuring bowl and it cooks perfectly and evenly. I used cashews the first time I made it but today I am using sliced almonds. I also cut down a little on the salt. Thank you for a fantastic recipe!

Real Strawberry Frosting

Easy, delicious and fresh tasting! I made an entire batch and it frosted about 12 cupcakes. I did use a large, round tip and piped them 'bakery style' so there was lots of frosting on each cupcake. These were for my 2 year old's birthday and she can be picky about textures so after reducing, I pushed the puree through a cheesecloth to remove the seeds. Other than adding a pinch of salt no other changes. I kind of like the idea of using half cream cheese and half butter... maybe next time!

Apple Cake IV

Made a couple adjustments based on preference and altitude. I reduced the sugar, using 1 cup of white and 1/2 cup brown and added a couple extra Tbsp of flour. I also grated some fresh nutmeg into the batter. I refuse to use veg oil so I subbed 1 cup full fat yogurt and threw in a couple Tbsp on softened butter. This cake was very tasty and moist. I left half a cake on the counter when I left for work this morning and when I came home I found that my husband and toddler had eaten it all :)

Apple Squares

These were pretty good. Like many other reviewers I doubled the recipe (except for the topping) and threw in about 2.5 cups of chopped apples. The bars got a little darker than I thought they would and I was afraid I'd overcooked them but they taste good. I will make these again. DH is plowing through his 4th one right now.

All-Day Apple Butter

I made this last night and it was wonderful! We started with Golden Delicious apples from our neighbor's tree that were on the sweet side so I cut the sugar to 3 cups and I'm so glad I did... the entire amount of sugar would have been way too sweet. I also omitted the cloves as I didn't have any, but grated in maybe 1/2 tsp fresh nutmeg. I started with a full crockput and after 12 hours the mixture was reduced by about half and nice and dark and thick. Cooked for another hour with the lid off and ran my immersion blender through it. Made 8 half pint jars. I still have 4 bushels of apples left on my table so I will definitely be making more. It beats any apple butter I've ever bought in a store and aside from all the peeling and chopping, couldn't be easier.

Sassy Freezer Slaw

This coleslaw won't make it to the freezer. It might not even make it to dinner as I'm standing next to the counter eating it out of the bowl right now. I cut back on the sugar a little but otherwise made as written. It's only been in the fridge an hour and already tastes awesome. Thanks Sassy!

Slow Cooker Baked Beans

Great tasting beans and easy as well. I used 4 or 5 slices of diced bacon and regular bbq sauce but next time I'll definitely use a hickory smoked sauce as I wanted a bit of smoke flavor. Thanks for the great recipe wannabe chefette!

Megan's Granola

Yum. Yum. Look no further for a fantastic granola recipe! I replaced the vegetable oil with healthier coconut oil (which you cannot even taste in the finished product) and had to bake mine for almost an hour to achieve that golden brown color that is typical of granola. On the advice of several other reviewers, I also eliminated the brown sugar and the granola was plenty sweet. **Update 4/03/14**Made this again with the brown sugar and I like it much better. The granola was crunchier, had more flavor and had more of those granola chunks you expect to find in granola. Will add the brown sugar from now on just as the recipe states.

Grandma VanDoren's White Bread

I used this dough to make cinnamon rolls, cutting the recipe in half to get 18 small-ish buns. I used regular old AP flour and subbed melted butter for the veg oil as I never use veg oil in anything. The dough was a dream to work with, rose quickly and tasted fabulous. I started making the rolls at 7:30 and they were ready to bake by 9:30. I can't wait to make loaves of bread with this.

Maple-Balsamic Vinaigrette

I have a good friend who is an amazing southern cook, Sherry, and her salad dressings are the best. I am always trying to recreate them with no success. This recipe is THE BEST salad dressing I have ever made and comes very close to one of Sherry's that I love. Made the recipe exactly as written except cut in half as there's just two of us. Like another reviewer, I used real maple syrup and good quality balsamic, which obviously makes a big difference in a recipe with only 5 or so ingredients. Will make again and again!

Grandad's Pancakes

These were great! The only reason I can't give them 5 stars is because they would have been way too sweet with the full amount of sugar. As it was, I cut the sugar down to 2T, which was just right. They were very light and fluffy, as another reviewer mentioned.

Monday Night Mac and Cheese

Good grief, this was excellent and SO easy! My niece requested a 'creamy' type mac and cheese and this was perfect. I followed the recipe to the letter, using half and half for the cream. Will make this again and again.

West Coast Trail Cookies

I loved these cookies. I rarely bake so when I do I want good results and this cookie delivered. I wasn't crazy about the idea of coconut but a couple people on the Buzz encouraged me to use it saying that it contributes only to texture and they were right. I couldn't taste it but I'm glad I used it. I swapped out the pumpkin seeds for sliced almonds but this recipe would lend itself to any number of fruit/seed/nut combinations. Great recipe, Westcoastmom! **Updated 3/6/14** I made these last night and substituted 1/2 the butter for coconut oil and they were fantastic! I'll make them this way from now on for the health benefits of the coconut oil.

Orzo with Caramelized Mushrooms and Wilted Spinach

Simple and delicious recipe. I could have sworn I had a box of orzo in the cupboard; that's why I planned to make this, but I couldn't for the life of me find it today, so I used quinoa instead. Other than that, and cooking the quinoa in chicken stock, no changes. Served over grilled lemon and herb chicken. Will make this over and over.

West Coast Trail Cookies

Good heavens, these are delicious! I don't do a lot of baking but we went for a long hike this morning so I figured we deserved a treat. At the urging of several other AR folks, I added the coconut even though I'm not a fan and I can't taste it at all; it just gives the cookies a great, hearty texture. The only swap I made was trading out the sunflower seeds for sliced almonds. I can't wait to try it with other nut/seed/dried fruit combinations. Thanks for a fantastic recipe Westcoastmom!

Triple Berry Crisp

This was great. Used only blueberries as I had a huge container from Costco. I've never seen a crisp recipe where the topping was used on the bottom as well, but we really liked it. I halved this recipe and used an 8x8 pan. I used about 3 cups of berries and a half stick of butter. Will make again!

Vegetarian Chickpea Sandwich Filling

I see this recipe a lot on 'The Buzz' so I decided to give it a try. Delicious! I doubled the recipe and didn't change a thing. I just threw all the ingredients into the food processor until it reached the consistency I liked. I can't wait for lunch tomorrow....

Mediterranean Quinoa Salad

I've been meaning to make this recipe for ages but with a new baby it's been tough to find the time. Finally got around to it today and it is fantastic! I did swap out the green pepper for a red one as we don't care for green peppers, and used red wine vinegar instead of balsamic. I also added a handful of chopped basil as there's so much in our garden right now. Whole Foods makes a quinoa salad that I'm addicted to and this comes really close! Will make often from now on, baby or not :)
