One Skillet Corned Beef Hash

Reviewed: Aug. 22, 2011
Great recipe, we go camping a lot in the summer and I tried this for BF one morning with eggs and toast. Made it almost exactly (except there are only two of us so I halved it) as the recipe called except I didn't measure the pepper or the vinegar. It was very good and makes enough for two breakfasts! Great with soft eggs and toast!! Thank you very much - it's a keeper and will remain with my "regular camping recipes" forever!!

Fresh Semolina and Egg Pasta

Reviewed: Apr. 7, 2011
Loved this recipe. I agree - I think the semolina makes all the difference! I used the Kitchen Aid mixer to blend everything into a ball, then kneaded by hand for about 10 minutes. The dough was very hard and I was quite concerned but after letting it rest for 30-60 minutes, it was softer and beautiful to roll out and use in the pasta maker. I did also add some dried basil and some black pepper to the dough while mixing.

Grilled Mussels with Curry Butter

Reviewed: Jan. 12, 2011
Made pretty much exactly according to the recipe. Took a bit longer on the grill, but it was a cold night outside. Also added a few scallops to each packet. Really excellent flavours! Will make again although I may try just doing it in a pot vs the grill. Thanks for a delicious recipe!

Shrimpcargot

Reviewed: Dec. 14, 2010
YUMM!! Used the correct amount of butter, added 3 minced cloves, used about 12 shrooms, and a bag of shrimp. Stuffed the shrooms with the shrimp, then just stuck in the extra shrimp in between. After drizzling with the garlic butter, I sprinkled a cheese mix (asiago, parm, mozza) and then sprinkled with a bit of dried basil. Beautiful! Our guests were impressed! Thanks!!

Butternut Squash and Spicy Sausage Soup

Reviewed: Nov. 30, 2010
Ok, this wasn't great. Actually the taste was ok, it was just kind of strange. Not certain if I agree that the sausage goes well with the squash. Next time I will try the plain creamy squash soup I think.

Baked Potato Soup

Reviewed: Nov. 25, 2010
Was very good. Used 2 larger cloves of garlic as I believe garlic improves everything! Also used fresh basil, rather than dried and about half tsp of thyme. Increased the flour to 4 tbsp and the potatoes to 3 which actually made it too thick so thinned it out with a bit of beef broth (I had used up all my chicken broth). Everyone really liked it, don't know if it really even needed the cheese. Will make again. Great cold weather meal! Thanks Kristi!

Basil Tomato Soup

It was ok, found the tomato-eeniss almost overwhelming though. Don't think I will make this again.

Chad's Slow Cooker Taco Soup

Reviewed: Nov. 19, 2010
Made in crock pot, used the meat as suggested in recipe plus added one package of Chorizo sausage as well. Couldn't find Mexicorn so just used plain corn. I added the kidney beans but not the black beans as it was so thick already. Not sure if the ranch dressing was really necessary? I used part of the package but don't think it was really needed as soup already had great full flavour. (I just used a plain normal beer cuz I didn't want to have to buy a 6-pk for one beer). Soup was spicy and filling, went fantastic with homemade baking powder & buttermilk biscuits to which I added chopped jalapeno and grated cheese! Wow! Great for Canadian winters!

Lemon Cheesecake

Reviewed: Nov. 9, 2010
Great recipe and nice and easy! Used 2 eggs rather than the substitute and also the zest of one lemon. Added a bit of vanilla extract as suggested by another review and it was excellent! Made it twice in one week and received awesome reviews!

Very simple and quick to prepare. Nice too because all the ingredients are commonly on hand or already in my pantry. Tender, tasty, everyone enjoyed them! Thank you Eve!

Debbie's Ultimate Mushroom Dish

Reviewed: Apr. 3, 2010
This was amazing! Delicious, I think its vital to not overdo the olives as they will take over if you do! I used about a half can of Lindsay's large pitted olives and it was just perfect! My son, who detests olives, didn't even realize they were in there. They are important though, I think it helps balance the dish! Thank you Debbie!

Glorified Hash Browns

Reviewed: May 3, 2009
I made this to take to a potluck. Everyone loved it! It was the most popular dish there! I added green onions to the hash browns and topped with chopped bacon. I aso used plain light cream cheese, and for the soup, I used mushroom and garlic. Very good, will make again!

Sweet Onion Pie

We LOVED this! Used Ritz crackers for crust. For cheese I used swiss and Asiago which gave it lovely flavor! Also used 2% milk rather than whole, next time will try skim. This dish would add a nice touch to any type of meal. Thank you!! Pretty easy to make also!

Italian Sausage Fried Rice

Reviewed: Feb. 9, 2009
Very nice one-meal dish. Made it using hot Italian sausage which really added flavor and heat. Also added half chopped red pepper for more variety. Very good, easy to make after work too. I would mix it up trying different sausages too. Thanks!

Roasted Garlic Peppercorn Sauce

Reviewed: Feb. 3, 2009
Was very good, although a bit bland, I added some grated asiago at the end and that really kicked it up a notch! Was certainly not too garlicky, don't think the nutmeg made much difference either. End result very tasty and less fat than cream!

Romaine and Mandarin Orange Salad with Poppy Seed Dressing

Reviewed: Jan. 29, 2009
Fabulous dressing. Made it according to the recipe the first few times, now I just make the dressing and add it to whatever type salad we are having. I especially like it with feta cheese and dried cranberries. Have to make it up for my sister on a regular basis. Very very nice!

Excellent marinade! Used brown instead of white sugar and used "light" soya sauce. Also used it for boneless pork chops, which were absolutely mouth-watering! Will use it on a regular basis! Thank you!

Moroccan Cooked Pepper Salad

Reviewed: Jan. 29, 2009
flavours were nice, I would say it's more of a salsa-type topping than a salad. Brought it to a dinner party as I was supposed to bring the salad to a Moroccan themed dinner. Tasted good but not salad-like at all.

Easy Raisin Cake

Reviewed: Oct. 9, 2007
Very nice. I used 3/4 cup sugar and it was great. I also tried the suggestion for the icing, which was very good too, but thick, I was unable to pour it. But a very nice old fashioned moist cake. Thank you
