Best Ever Banana Bread

This was really awesome banana bread! I brought it in to share with my office and everyone loved it. I did make some alterations: 1. Swapped vegetable oil for coconut oil; 2. Used vanilla almond milk + vinegar instead of buttermilk; 3. Added cinnamon & nutmeg; 4. Swapped pecans for walnuts + cacao nibs; 5. Instead of 1.5 cups sugar, 1 cup white sugar + 1/2 cup brown sugar.

The Best Thai Coconut Soup

This soup was so TASTY! My only complaint was the chewy bits of lemongrass. The next time I make this I would cut the lemongrass in 2-inch pieces and then remove them before serving. I didn't follow the recipe to a tee as I wanted to use up 3/4 cup of leftover coconut milk. I cut all the other ingredients in half and the soup was still super TASTY!

Szechuan Spicy Eggplant

Overall a tasty recipe, but 1lb of ground beef was too much. I used 3 long skinny eggplants, which were drowning in the beef. I have to agree with another reviewer that the dish is traditionally made with ground pork. One thing I did differently from the recipe was instead of cooking the shrimp first, I threw it into the pan for the last 5 min. I would make this recipe again, but use 1/2 lb ground turkey instead of beef, add more chili sauce, and less soy sauce (replace with more soup stock). I might even add 1/2 lb of tofu too.

Lemon Chiffon Cake

This is the lemon cake recipe I've been searching for. It's light, spongey, and slightly lemony. I baked about 2/3 of the batter in an 8" round cake pan, and the remainder into cupcakes. The cake was done in 50 min. The only problem with this recipe was the directions. I would have mixed the first part by hand. The egg whites should be whisked by an electric mixer because it's tiring to whisk them to that consistency by hand.

Simple Whole Roasted Chicken

My husband made this last night and it was sooo good!!! He didn't marinate the chicken a day ahead and he skipped out on the cloves & allspice because we didn't have any on hand. He also didn't cook it breast-side down and it was still juicy. I urged him to make this again for future dinner parties. :)

Hong Kong Style Egg Tarts

Pretty good recipe! I modded the crust recipe according to the reviews and used less icing sugar and used cake & pastry flour instead of all-purpose. I liked that the crust was slightly sweet, almost like a soft cookie, and not typical of those from the bakery/dim sum restaurant. Also, 450F was too hot for these tarts, so I baked them at 425F for around 15 min. I will definitely make these egg tarts again!

Buttermilk Scones

It seems there might be too much flour in these scones because they became really pastey in my mouth. My fiance loved them though. I didn't roll out the dough, but instead used my hands to roll a fistfull of dough into balls. So maybe they were too thick. I might try to add other flavours to these scones next time and maybe reduce the flour and add a bit of sugar.

Vanilla - Chocolate Powdered Sugar Frosting

This recipe is too sweet, even though I cut the icing sugar down to 1 1/2 c. So the icing tends to become less thick. It still holds up fine for my green tea cupcakes. Instead of the cocoa powder, I added 2 teaspoons of green tea (matcha) powder.
