Fried Catfish Nuggets

As catfish goes, this was a good base recipe. In the future I would use more salt and perhaps add some granulated garlic to boost the flavor. The amount of oil needed was way overestimated. In my cast iron skillet, I was able to fry up all the fish in just 1 cup of oil!

Irish Bacon And Cabbage Soup

This soup is excellent! To make it more "soupy" I use a whole can of chicken broth. I have made it twice using pancetta and while the flavor is exceptional, the pancetta is very expensive. Next time I will buy back bacon from the butcher.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

This was just okay. It was just too bitter even with the sweet sausage. I added 1/2 tsp basil which helped, but I think doubling the cream would be good. I didn't have any more so I added 3 TBS sour cream instead. I think that it's the red wine that pushes it over the top.

Perfect Lobster Bisque

With the following changes, you'll never want for another seafood bisque recipe! I used just 8 oz chicken broth and for the remaining liquid I reserved the juice from the lobster and added clam juice to make up the difference. I then whisked in 3oz tomato paste and put it all in the soup. I used 1/4 c white wine (instead of 1/2c) and 1/4c sherry. It was ABSOLUTELY incredible! *Works well with crab as well or a lobster/crab combo.*

Irresistible Irish Soda Bread

Tasted like sweet biscuits in loaf form. Not at all like "real" soda bread. For an authentic loaf try Irish Brown Soda Bread.

Irish-Style Lamb Stew

This is simple and WONDERFUL just as it is! I made sure to cook it with the bones and just removed them before I served it to make for a full flavored, protein packed stew. Tasty and tender. Can't wait to make it again. I won't change a single thing.

A very tasty, healthy cookie! The whole family loved them and they were simple enough that the kids could do most of it. I added 1/2 tsp Pumpkin Pie spice which was great.

Spicy Pumpkin Chili

This was very good, but I think there are a couple of things that improve it: 1) use fresh garlic and press it rather than using minced from a jar 2) don't drain the beans! It made for a soupier chili. 3) Add a dash or two of Tabasco at the end. This chili is rather sweet and that helped to counter act. This was great with Vegan Agave Cornbread Muffins!

Pumpkin Oat Bread

My family loved this bread. If you're looking for the Starbucks type pumpkin bread with more sugar and spice than pumpkin, this is NOT for you! This lower sugar bread was moist, easy and delicious. We could actually TASTE the pumpkin over the spice which was a nice change. Next time I'm using whole wheat flour and some wheat germ as well as cutting back to 1/3 c oil and 1/3 c applesauce. Will definitely make this again!

Bacon and Potato Soup

I prepared this recipe EXACTLY as written and it was FABULOUS! It was a bit hot for the kids so I put a touch of cream in it to cool it down and that was great too. Everyone from age 2 to 32 loved it. A definite winner!

Hasty Chocolate Pudding

An incredibly tasty and ridiculously fast dessert! I was craving chocolate pudding and this simple dish fit the bill. I will NEVER buy a box pudding again! The vanilla was great, but I think for the holidays I may put in some rum or coffee liqueur for a little kick.
