Chewy Coconut Cookies

Moist, chewy, and delicious! I made one modification on purpose and a couple by accident. First, I reduced the white sugar to 1/4 c. like previous reviewers suggested since I was using sweetened coconut. I also added 1/2 t orange extract by accident, and went ahead and added the 1/2 t of vanilla extract as well. The orange tastes great in the cookie. Also, I couldn't find my 1/4 c measuring cup, so when measuring the flour, it was probably closer to 1 1/3 c rather than the 1 1/4 c called for. I didn't soften the butter, because the recipe didn't say to, and I'm too impatient for that. I rolled them into 1" balls and didn't flatten them at all. They turned out thick half-domes, not flat AT ALL. I did refrigerate the dough while the oven what preheating, and between batches. 10 min baking time was prefect. Will make many many more times! Thanks!

Fluffy Pancakes

Just made these. Here's the scoop: I can burn any pancake, get any pancake hopelessly stuck to the pan, and make flat any fluffy recipe. These are the first pancakes I have ever made that were absolutely FOOLPROOF! Fabulous, fluffly, and cook perfectly. Soooo glad I doubled the recipe (which I followed exactly) because they are flying!!

Good Old Fashioned Pancakes

Followed the recipe exactly and it tastes salty and has a strong baking powder taste. Also, they just don't cook well. They burn before they bubble on top, and I'm not a noob pancake maker, so I know how to heat a griddle :)

Seafood Pasta Salad

Simply awesome! I increased the dressing by half, since everyone else did. I added shredded carrots and cubed avocado, since I had some to get rid of. I also added Old Bay for no other reason than that I'm from Maryland :) This is a really flexible salad, I don't think you can go wrong with it!

Italian Sausage Soup with Tortellini

I've made this several times and it is always delicious! I know nothing about "casings removed" sausage, so I've always used polish sausage. I've even made changes as my pantry requires and it still comes out great. I often use a 28oz can of diced tomatoes, somewhat drained, because fresh tomatoes are expensive :( I've made it without wine if I happen to drink all my wine, and it still turns out great. Today I threw in a half jar of left-over salsa I've been wanting to get rid of. Still great! You really can't mess up this recipe!

Big Soft Ginger Cookies

I've made these cookies several times and they never last long. These cookies are SO good that they even taste great if you, say, completely forget to put the ginger in. Hypothetically, of course...;)

Cabbage Beef Soup

A comforting and filling soup!! Yummy! I did want to note, however, that this recipe with fill a 6qt slow cooker to the brim! If you have a smaller slow cooker, you'll need to reduce the recipe proportionately!

Chicken and Corn Chili

Since I just bought my crock pot the day before, I didn't feel comfortable straying from my first recipe, so I made it exactly how it is written, including starting it the night before (it helped that I go to bed late, so I started it at 1am!). The chicken was sooooo moist and tender, I'm glad I cooked it overnight! Since it wasn't clear in the original recipe, I did take others' advice and didn't drain the corn or beans. No, not really the consistency of traditional chili, but I'm not going to knock the recipe over semantics. AWESOME with tortilla chips and my kids loved it!

Pea 'n' Crab Pasta Salad

This is an awesome and simple salad. I've made it both with and without the feta, depending upon whether I remember to buy it, and it's delicious either way. My husband is absolutely addicted to this salad, and requested it for his birthday dinner tomorrow!

Sean's Falafel and Cucumber Sauce

This was delicious! I did end up adding an extra egg. I found that if I reduced the size of the balls, they stood a better chance of not falling apart. I omitted the mayo in the cucumber sauce and it was delicious. Also, I double the recipe because the 8 balls didn't seem like enough. Now I have falafel to eat tomorrow! The original recipe definitely makes enough to feed a 4-person family.
