Boston Baked Beans

This recipe was okay. We really like baked beans in my home but this didn't go over very well. First it was too sweet and second it was too tomatoey. Those two flavors completely overpowered the bacon. It's too bad because it smelled wonderful while cooking and it was easy. I ended up using canned navy beans and cooked it in a cast iron pot for about 2-1/2 hours. The beans were perfectly cooked. I won't be making this again.

Tasty Orange-Oatmeal Muffins

My family liked them but I found them to be a tad on the bland side. Although the orange flavor was really nice. I noticed that there was no salt in the recipe and debated whether or not to add some. I wish I had, it may have made a difference. My biggest complaint is that they stuck to the muffin papers. I accidentally put two papers in one cup and it stuck to both! I think it may be because the batter was too thin. I won't be making these again.

Beef and Biscuit

Let me start by saying that the dish tasted really good. It really did. My family even agreed. But I had a hard time getting them to even try it. It did not *look* good and they couldn't get past that. I could and really enjoyed it. I didn't have the refrigerated biscuit dough, so I made a double batch of Bisquick biscuits with buttermilk. I spread half the dough in the bottom of the pan and pre-baked it. Then I topped it with flattened balls of biscuit dough. I won't be making this again, not because I didn't like it, but because I don't think my family will want to touch it again. Too bad.

Grandma Minnie's Old Fashioned Sugar Cookies

This is a good, basic cookie. It has a nice flavour and crunch. I found I had to add an extra tablespoon of cream because the dough was a bit dry, but that was the only thing I did different with this recipe. The dough handles well and is perfect for using cookie cutters. My only advice would be not to use small cookie cutters. I used a combination of small (~1 1/2 to 2" in diameter) and larger ones. Also, roll is out a little thicker than 1/8". The cookies shrink and when they are little, they really are little. :)

Mocha Chiffon Cake

Turtle Cake I

Oh Boy is that EVER a rich cake!!!! My mom loves Turtles so I made this for her birthday. The only change I made was in the caramel sauce...I used roughly half the amount of evaporated milk and butter and increased the caramels by roughly half. The sauce was nice and thick and unbelievably sweet and buttery. I made a glaze of 1/2 cup milk chocolate chips, 1/2 cup white chocolate chips, 3 tbsp of strong coffee, 1 tbsp of brandy and 1 tbsp of butter, melted it all gently in a double boiler and poured it over the top of the cake. It was just like a real turtle. The only thing I found was lacking was that the cake (Devil's food) was too fluffy and not dense enough. If I make this again, I think I'm going to use the "Chocolate Cavity Maker Cake" found on this site instead. That's why it only got 4 stars.

Baked Brie in Puff Pastry

I made this for a New Year's Eve feast. The only thing I did different was put a couple of tablespoons pear preserves on top of the brie. It was so good! I'll definitely make this again.

Cherry Pound Cake

Pinwheel Cookies III

The filling is really good and sweet but I wasn't too pleased with the dough. I did as others recommended and refrigerated it overnight but it was a real pain to work with. It cracked big time when I tried to roll out. It was even more difficult to roll up. I'll use the filling recipe again for sure but I think I'm going to see if I can find another recipe for the actual cookie.

Caesar Salad Supreme

I've always said "I don't do home made caesar salad dressing." Now I do. this is soo good! The only thing I do differently is I don't use anchovies (can't stand the stuff), so I add a little bit more salt. It's a family favourite and I now make it regularly for my grilled chicken caesar salad. Yum! Even better...I use low fat mayo...so it's almost guilt free. :o)

Peach Cobbler II

This is so good and so easy to make! It's a family favourite. The only things I do different is use 4 peaches instead of 3 and have on occasion substituted butter for the shortening. I've also made it with canned (in water only) peaches and frozen peaches. It all works! I serve it with a little drizzle of light cream.

Marshmallow Fondant

Maybe it was me...but I had a really hard time with this fondant. I've used the store bought one but found it didn't taste that good. This one tastes okay but it was a pain to work with. It kept sticking to my mat, cracked, broke and was generally very hard to work with. I discovered that it worked okay when I kept adding water to make the fondant really soft and then used HUGE amounts of cornstarch to keep it from sticking to the mat and rolling pin. I won't be making this again. I think I'll stick to the store bought stuff and use flavouring.

White Almond Wedding Cake

Whenever I look at a recipe review I always look at the low scores first. One of the biggest complaints was that this recipe tasted like a "boxed cake". It did a little but that's understandable considering the base is a boxed cake. With that said, it is a really, really good cake. I made it for my in-laws 50th wedding anniversary with a raspberry filling and marshmallow fondant (found here as well). The cake was a total hit. Moist, dense and really good. The only thing that I found was a bit lacking was that it could have had a little bit more almond taste. Maybe next time I`ll add another 1/2 tsp more of almond extract. But I'll make it again for sure. Thanks for posting.

Buttermilk Oatmeal Muffins

I make these for my boys to eat for breakfast before work. They're very versatile and can be modified any way you want. I've made these muffins with raisins, reduced the oil by half and added two mashed bananas and once even mixed in Skor toffee bits. (THAT was good!) I

Pork Tenderloin with Raspberry Sauce

The tenderloin came out really good with the seasonings. But the winner was the raspberry sauce. I doubled the sauce and threw in a couple of handfuls of fresh raspberries and let it simmer, stirring gently for about 5 minutes. Added a nice texture to the sauce. My family raved about it. This is a definite keeper.

Chocolate Cookie Cheesecake

Oh my goodness this cheesecake was sooooooo good!! I didn't make any changes to the recipe except that I added a couple of handfuls of chocolate chips to the batter which only added to the decadence. Also, I found that the cookie crumb crust was too loose, (I had crumbs everywhere when I sliced it) it could use a couple more tablespoons of butter to bind it. A lot of people complained of the sour cream layer but I have to tell you that the layer of sour cream cut the sweetness of the chocolate top and gave it a wonderful zing that really worked. Not an everyday kind of cake, but a real keeper for those very special occasions. I give it two thumbs up and will make it again for sure!

Grandma's Harvard Beets

Let me be clear here first of all.....I simply *do* *not* *like* beets...at all. In my mind there is a certain "ick" factor about red slimy veggies. But my hubby absolutely loves the stuff, so I decided to make it for him. First of all, it came out nice and thick but not too thick even though I forgot to put in the butter, salt and pepper at the end. Quite frankly, it didn't need it. Second of all, because I love my hubby, I agreed to try it. You know, it's actually pretty good. My hubby went wild over it. The only other thing I did different (aside from forgetting the butter and salt and pepper that is) was I used the beet juice like others here recommended. I'll make it again for sure....AND maybe even eat some myself. A keeper!

Quinoa Salad with Dried Fruit and Nuts

I had a salad very much like this when lunch was catered at work recently. I added craisins, grated carrot and substituted the white vinegar for balsamic. It was good, but my family wasn't too thrilled with it even though they ate it. I suspect that it had more to do with "it's healthy" rather than the actual taste.
