Beer Pancakes

Pretty much the best "alternative" pancake recipe out there. They have a great flavor (which you can alter with different beer types) and texture - they turn out more thin than cakey, but I like them that way.

Scrumptious Strawberry Shortcake

Great shortcake recipe. Good enough to eat on its own. (Not that I would do that... ) I cut the baking powder to a little over 3tsp because of my 5000' altitude, and I didn't have any creme of tartar, but they turned out great.

Saag Recipe (Indian spiced spinach) | India | Whats4Eats

Totally the best and easiest saag recipe I've found. I use a bag of frozen chopped spinach to save time and make the Chana Saag variation with chickpeas for some protein.

Braised Red Cabbage with Apples

Good, but could have been better. I followed the recipe exactly and it seemed to be under seasoned, so I think I will up the vinegar and spices next time I give it a go.

Shrimp and Peanut Butter Noodles

Excellent quick, relatively healthy meal. Takes me more than 15 minutes, but that's probably just me. I made it according to the recipe the first time (substituting cider vinegar for the black vinegar, which I can't find), and it was quite good. I have also used buckwheat soba noodles (more protein) and canned chicken (cheaper) with good results. If you're using canned chicken, be sure to add it after draining the noodles and broccoli.

Super easy, super tasty. The only things I changed was to reduce the sugar by about a third and fold in one cup of chocolate chips before putting it into the pans.

Quick Tuna Casserole

Very quick, pretty tasty. I added a little bit more milk to smooth it out a bit and topped it toasted breadcrumbs. Will likely make it again.

BUSH'S® Hopping John Over Rice

This dish is pretty good for being so easy. Not fabulous, but pretty good. I did not have bacon dripping on hand (imagine that), but shortening and a little season salt seemed to work. I also added a little chopped celery just for the heck of it. It is also probably good to use decent (not minute) rice.
