Sweet Hot Mustard Chicken Thighs

Well liked by the whole family. I used boneless, skinless theighs, turned the oven down to 400 and cooked for 30 minutes or so.

Pasta e Fagioli ala Weeble

I had two issues with this. 1. I had a hard time getting the bacon to crisp while cooking with the onions. I finally pulled the bacon out and sautéed it. 2. I'm not sure how pasta e Fagioli is supposed to taste but this tasted a lot like bean and bacon soup. It was very filling and not a bad just not my taste.

Garlic and Herb Pull Apart Bread

Delicious! I put some grated Parmesan cheese in the bottom of the pan before adding the biscuits which added a nice look on top and a nice taste. I only need to cook this about 14 min in my oven.

Pork Medallions with Balsamic Vinegar and Capers

All in our family of picky eaters liked this. I doubled the chicken broth to make more sauce. For 1 1/2 inch medallions it took me closer to 10 minutes or so to cook even after the initial sear. We'll add this to our rotation.

Chocolate-Hazelnut Spread Cookies

These were easy to make and not too sweet. My teen without the sweet-tooth really liked them. I used a silpat on a noninsulated cookie sheet and there was no spread as long as I kept the cook time to about 7 1/2 minutes.

Lemon Cheese Ball

This is a little tart for my taste even with using Country Time sweetened lemonade mix so I add a little more powdered sugar. I serve it in a dish and use it more as a dip. My MIL loves it.

Maple Pecan Shortbread Squares

Great taste. Super simple to make. I added a pinch of salt to the dough and used pecan halves (though chopped pecans might have made it easier to cut). I lined the pan with parchment paper to make them easy to remove.

Homemade Chicken Fettuccine

This was really good and very easy. I used salt, pepper and 1/2 tsp Old Bay on the chicken while sautéing. Other reviews thought it was bland but it tasted terrific with the addition of the Old Bay. My only negative about this recipe is that it was not going to feed the four people in my family. The next time I will double the pasta and the sauce.

Stroganoff

I really liked this. It was quick and easy. I only had 1/4 cup sour cream so I added some half n half and about 2 oz of cream cheese. It was a little thick with the changes but it tasted really good.

Baked Zucchini Chips

I thought these were tasty. My husband and kids, not so much. I added 1/8 tsp paprika and drizzled olive oil over the top. I would only make again using a small zucchini and cooking it for myself.

Jimmy Dean Breakfast Casserole

Got a ho-hum response from the kids but a hearty 5 stars from the hubby! Will make again. Used 8 eggs and 2 cups of milk; more might not have fit in my pan. And we had plenty including leftovers.

My Chili

I really like this recipe because it is a great base that is easy to make to your own taste. I use petite diced tomatoes (after trying a batch with the stewed tomatos)and a can of mild chilie beans instead of kidney beans. I adjusted the seasonings to my taste. I cut back on the chili powder and added some Old Bay. I do recommend sauteing the onions first then add the garlic then the meat. And season beef with salt & pepper while it is cooking.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I loved the idea of these cupcakes but they did not come out nearly as well as I had hoped. I think the 20 min cook time was too long. The cookie part seemed dry. I have two boys. One thought they were ok and the other tried one and he was done with them.

Super Easy Cheese Dip

This tasted really good and it was highly complimented at the party I brought it to. It was nice and creamy. The next time I will use the whole packet of onion soup mix (because what am I going to do with the rest of it anyway?) I may add some chopped waterchestnuts to give it a litte more texture.

Quick and Almost-Professional Buttercream Icing

The taste was terrific. I used salted butter. After creaming the butter and vanilla, I added half the powdered sugar and half the milk, mixed for a minute then the other half powdered sugar and milk and mixed for another minute. If anything, I could have added maybe another half TBSP milk but this worked well piped on cupcakes. I'll use this recipe again.

Easy Cheese Ball II

I love cheese balls but this one just didnt' do it for me. I made it one evening and refrigerated it over night. It never really softened up and it seemed a bit dry. A little texture may have helped like some choppped onions or water chestnuts.

Zucchini Patties

Very tasty. I used 1/4C flour + 1/4C Panko and cooked the patties in 1 Tbsp oil oil + 1 Tbls butter. When I make these the next time I will add 1/2 tsp Old Bay for a little kick.
