My Chili

I really like this recipe because it is a great base that is easy to make to your own taste. I use petite diced tomatoes (after trying a batch with the stewed tomatos)and a can of mild chilie beans instead of kidney beans. I adjusted the seasonings to my taste. I cut back on the chili powder and added some Old Bay. I do recommend sauteing the onions first then add the garlic then the meat. And season beef with salt & pepper while it is cooking.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I loved the idea of these cupcakes but they did not come out nearly as well as I had hoped. I think the 20 min cook time was too long. The cookie part seemed dry. I have two boys. One thought they were ok and the other tried one and he was done with them.

Super Easy Cheese Dip

This tasted really good and it was highly complimented at the party I brought it to. It was nice and creamy. The next time I will use the whole packet of onion soup mix (because what am I going to do with the rest of it anyway?) I may add some chopped waterchestnuts to give it a litte more texture.

Quick and Almost-Professional Buttercream Icing

The taste was terrific. I used salted butter. After creaming the butter and vanilla, I added half the powdered sugar and half the milk, mixed for a minute then the other half powdered sugar and milk and mixed for another minute. If anything, I could have added maybe another half TBSP milk but this worked well piped on cupcakes. I'll use this recipe again.

Easy Cheese Ball II

I love cheese balls but this one just didnt' do it for me. I made it one evening and refrigerated it over night. It never really softened up and it seemed a bit dry. A little texture may have helped like some choppped onions or water chestnuts.

Zucchini Patties

Very tasty. I used 1/4C flour + 1/4C Panko and cooked the patties in 1 Tbsp oil oil + 1 Tbls butter. When I make these the next time I will add 1/2 tsp Old Bay for a little kick.

Decorator Frosting

Added extra milk so it was piping consistency. Tastes pretty good. I'm not usually a fan of powerdered sugar icing but this was pretty good when beat really well.

Ranch Oyster Crackers

We loved this. Dried dill can be strong so I used 1/4 tsp dill and 1/4 tsp italian seasoning. I also used a little more than 1/4 C oil.

Fruity Couscous Salad

This was different and I liked it. I used dates instead of apricots because that is what I could find. I served it for 6 adults who had never had couscous. Three like it a lot and three did not care for it.

Shrimp Scampi V

This is good, especially if you like garlic. My 12 y-o liked it which says a lot for it. The sauce seemed thin so I whisked in a couple teaspoons of flour while cooking and I liked it better that way. I also added 1/4 tsp Old Bay.

Buttermilk Pancakes I

Bacon for the Family or a Crowd

Baked for 15 min then had to turn over for another 5 minutes to get somewhat crispy bacon. I found this to be an easier way to make a lot of bacon.

German Sweet Chocolate Cake I

My 12 year old son made this cake twice for a class project. There are a lot of steps but it makes a wonderful cake. We used a 9x13" pan and had to bake it for 50 min at 350 degrees. At 30 min it was still a pool of yummy chocolate.

Vegetable Beef Soup

This recipe worked out great. I wish there was a little more liquid to it but it was just the right thickness. Easy to adjust to your own taste. I added sauted leeks and garlic. Fantastic.

Mushroom Sauce Baked Pork Chops

Very tasty. Made it my own by slicing onion in rings instead of chopped. Added paprika to salt, pepper, garlic rub. In the soup mixture I doubled the soup, added a sprinkle of cayane pepper and added about 1/4 C heavy cream. In a baking dish I put the cooked onion rings, then chops, then soup mix and cooked covered for 30 mins. Served over rice. Good and satisfying.

Beefy Mushroom Barley Soup

This was good. It just seemed a little thin like it was missing something. I forgot I was out of sour cream so maybe that would have helped. On the advice of my butcher I used a small chuck roast that I cut into small pieces and the meat was tender and delicious.

Butter Icing for Cookies

Very tasty icing. It hardened rather quickly so you need to be ready to spread it on. It can also be warmed in the microwave for a few seconds to help the spread-ability.
