Baked Spaghetti I

Made this for a church potluck and almost all of it was eaten! Used ground turkey instead of beef and liberally applied an Italian seasoning blend while it was browning so I did not add the teaspoon of oregano. The canned tomatoes already had basil and oregano added for more Italian flavor. The only other change I made was to use cream of celery soup since I didn't have any cream of mushroom soup. Will definitely make this again.

Cheese Garlic Biscuits II

Closest to the famous restaurant biscuits that I have ever made! As other reviewers mentioned, I increased the baking powder and cheese. My DH said they are cheesier than the famous biscuits, probably due to the extra cheese! Will definitely make these again.

Oatmeal Raisin Cookies with Truvia® Baking Blend

Made these for my diabetic DH tonight. He gave them 5 stars for being no-sugar added and 4 stars overall. They were very easy to make. I did substitute 1/4 cup mini chocolate chips for 1/4 cup of the raisins.

Yummy Sweet Potato Casserole

This is a great recipe to adapt for diabetics! Have made it substituting Ideal brand sweetener and it tastes great. Could not find that brand this year, so I substituted a stevia blend and it also tastes great. Other than the sweetener substitution, I baked the sweet potatoes, and followed the rest of recipe as stated. Everyone enjoys these, even the non-diabetics in the house!

Health Nut Blueberry Muffins

Blueberry muffins were a Christmas morning tradition when I was growing up, but until this recipe, I had not found one I wanted to make my own. We really liked these! Didn't have oat bran, so I used wheat bran instead. Since DH is diabetic, I substituted stevia blend for the sugar. Also, my banana was a bit small, so I used about 1/2 cup applesauce, omitting the oil, and these were fabulous! However, other than substituting the stevia blend for sugar, I think these would be fabulous as written.

Lamb and Winter Vegetable Stew

When I served this I forgot to add the cornstarch/flour and sour cream, but DH really liked it! Added the sour cream and cornstarch after the meal. DH took it for lunch the next day but did NOT like the addition, hence four stars. (The photo with the recipe does not appear to have sour cream in it either.) As did other reviewers, I added carrots and cooked it in the crockpot. Will definitely make again, but without adding sour cream!

Broccoli Cheese Soup

Made this for a girl's night get-together and we all LOVED it!! There are only three of us, so I cut the recipe in half. Because I had fresh broccoli from the farmers market, I steamed it and then pulsed it in the food processor. Also used Queso Blanco processed cheese since that is what I had on hand. One of the girls said her mom used to make it with the yellow processed cheese, but she liked the white cheese better! This recipe is a "keeper." Just wish DH liked broccoli.

Mango Coconut Sauce

This was a great sauce over some chicken sauteed in hot pepper-infused olive oil and pumpkin ravioli. I did add two chipotle peppers when I pureed the mango which added a nice spice. However, I think I'll cut back on the chipotle peppers when using the infused olive oil in order to taste more of the coconut and mango. Thanks for sharing "Crazy Chef"!

Fresh Squeezed Lemonade with Truvia® Natural Sweetener

This was a good recipe to use trying stevia instead of sugar, but it was not lemony or sweet enough, although we drank the whole pitcher. (I did not have any Truvia because I found it not to be sweet enough when using it previously, so I substituted Stevia in the Raw.) When making a second pitcher, I took the zest off one lemon and added it to some stevia to enhance the flavor. Then I used a full cup of the lemon-infused stevia, dissolving it in a cup of warm water before adding the lemon juice and cold water. First taste is more to our liking.

Pumpkin Coffee Cake

We loved this with the changes I made. First I used 1/2 cup applesauce instead of butter in the cake. Second I used Ideal sweetener instead of sugar since I am cooking for a diabetic. (I also used Splenda brown sugar blend in the topping.) Then I doubled the pumpkin and increased the spices as suggested by other reviewers. (For reference, I used 1 tsp. cinnamon, 1 tsp. ground allspice and 1/4 tsp ground cloves. I also added 1 tsp. cinnamon to the topping mix.) Lastly, I used 1/2 unbleached white and 1/2 whole wheat flour as is my practice. This is a good base recipe from which to start because the cake is very moist, and the changes made it more flavorful.

Pinto Bean Pie III

If I had mashed up the beans better, I think this would have been a bigger hit. However my sons figured out it was different, so they were already assuming they would not like it. Would try this again if I could figure out a substitute for the dark corn syrup that my diabetic DH can consume.

Rosemary Roasted Turkey

Roasted this for Easter dinner and it was delicious! I did not have fresh spices so I had to use dried, but the flavor was still really good. This recipe definitely needs to be fixed again!

Cheesy Vegetable Lasagna

This was really good. Cannot remember all the veggies I used since I was trying to use up some items from my CSA basket, but the sauce was good, and that is what makes a good vegetable lasagna.

Gingered Carrots

These are a very good flavor mixture and I fix these periodically. However to enhance the ginger flavor, I now use candied ginger, finely minced, that I had bought and then couldn't figure out how to use.

Tomatillo Salsa Verde

As one reviewer suggested, I chopped the tomatillos and ran them through a food processor before cooking which made the salsa super easy to make. I also added about 1 T lime juice before cooking. Took this to a party and it got rave reviews as well as lots of oohs and aahs that it was homemade! Thanks Kimberly Binning for sharing.

Best Fried Green Tomatoes

Previous attempts to fry green tomatoes did not go as well as I hoped, so I went looking for a recipe. This one fits the bill! Only change I made was to cut the tomatoes in 1/4 inch thick slices. Yum!

Ultimate Twice Baked Potatoes

Years ago when we were dating I fixed a meal for my current husband that included frozen twice baked potatoes. That is the only item from the meal that either of us remember, and they made a big impression on DH. Now that I "really" cook, I was delighted to find a recipe that tasted even better than those potatoes of our memories! Thank you PONYGIRL64 for sharing.

Microwave Popcorn

Been wanting a healthier alternative to the bags of microwave popcorn, and this fits the bill. However, my brown paper bags hold only 1/4 cup popcorn so I use about 1 tsp. of oil. We now keep a variety of powdered seasonings, (ranch, kettle corn, white cheddar), to flavor the popcorn to everyone's tastes. Thank you ACONTORER for sharing!

Best Buckwheat Pancakes

Having grown up with my mother making Aunt Jemima's buckwheat pancakes, a mix I no longer see in the stores, I was looking for a recipe using buckwheat flour to replicate those memories. This recipe was perfect! Since we had fresh blueberries from the local farmers market when I made these, we had delicious blueberry buckwheat pancakes for breakfast!
