Fabulous Fajitas

This was the easiest fajita recipe. In twenty minutes I had dinner on the table. I was running low on flour tortillas so I ate mine in a bowl topped with lettuce, tomato and a small sprinkle of low fat cheese. I'll be making this one on a regular basis.

Asparagus Parmesan

Banana Sour Cream Bread

Don't bother looking at any other banana bread recipes This one is so delicious. I did divide the batter and used chocolate chips for half and pecans in the other half. I made three loaves and twelve muffins. I cooked the muffins for thirty minutes. Great for breakfast on the run.

Chocolate Trifle

This dessert was fabulous. I used real whipping cream and made my own, sweetening with 1 c. confectioners sugar and 1 t. vanilla in place of the tub of cool whip. I added freshed sliced strawberries between the layers since they are in season right now and the splash of color made for such beautiful presentation. This recipe is absolutely decadent and chocolate lovers will go crazy over this one. Be prepared to share the recipe.

Buttermilk Pancakes I

I loved these pancakes and so did my children. They were very light and fluffy and I really should have doubled the recipe so that I could freeze some for later in the week. I did make a couple of minor changes. I added some vanilla, replaced refined sugar for natural cane sugar, a couple of tablespoons of flax seed meal disguised with just a few chocolate chips for my children. We served with sliced bananas and sugar free syrup. THEY LOVED THEM!!!

Buttermilk Pancakes II

I LOVED these pancakes! Will never make any other recipe but this one. The great thing is that I had left overs after feeding my family of 5! The added vanilla is wonderful. Served with fresh blueberries and canteloupe. Great for Sunday breakfast.

Banana Trifle

A user recommended this one to me on the recipe board and since it was her recipe I couldn't resist giving it a try. Boy and am I glad that I did. I couldn't find the banana pudding flavor so I bought the cheesecake flavor and it still tasted light and delicious. This is one of those desserts that is great just the way it is but I think you could modify to suit your own tastes. I would love to see what might happen if I added a can of well drained crushed pineapple. Fantastic. Thanks for sharing!!!

Vanilla Ice Cream VIII

What a fantastic and EASY recipe. I like it made with just milk rather than whipping cream-it just tastes lighter and is very refreshing on a hot day. Although no improvements are needed, I sometimes throw in a box of pudding mix-white chocolate is my favorite. I have made this with chocolate milk too. My kids love it!! *If you are watching your calories-try using fat free milk, splenda sugar blend and sugar free pudding mix.

Double Layer Pumpkin Cheesecake

This is a wonderful cheesecake recipe! I doubled it and made two. Somehow, I wound up with too much filling so I used my leftovers to make little mini cheesecakes. I had enough to make 6 and my kids went crazy over them. I placed a nilla wafer in the bottom of the cupcake liner, and baked for 15 minutes. Simple to serve and a perfect portion!
