Banana Trifle

Reviewed: Mar. 10, 2009
A user recommended this one to me on the recipe board and since it was her recipe I couldn't resist giving it a try. Boy and am I glad that I did. I couldn't find the banana pudding flavor so I bought the cheesecake flavor and it still tasted light and delicious. This is one of those desserts that is great just the way it is but I think you could modify to suit your own tastes. I would love to see what might happen if I added a can of well drained crushed pineapple. Fantastic. Thanks for sharing!!!

Double Layer Pumpkin Cheesecake

Reviewed: Nov. 21, 2009
This is a wonderful cheesecake recipe! I doubled it and made two. Somehow, I wound up with too much filling so I used my leftovers to make little mini cheesecakes. I had enough to make 6 and my kids went crazy over them. I placed a nilla wafer in the bottom of the cupcake liner, and baked for 15 minutes. Simple to serve and a perfect portion!

Vanilla Ice Cream VIII

Reviewed: Jun. 15, 2008
What a fantastic and EASY recipe. I like it made with just milk rather than whipping cream-it just tastes lighter and is very refreshing on a hot day. Although no improvements are needed, I sometimes throw in a box of pudding mix-white chocolate is my favorite. I have made this with chocolate milk too. My kids love it!! *If you are watching your calories-try using fat free milk, splenda sugar blend and sugar free pudding mix.

Orange-Pineapple Ice

Reviewed: Sep. 27, 2008
this recipe was good with the potential to be much better with a few adjustments. Next time I will add mandarin oranges instead of pineapple, which my kids weren't crazy about. I will also take great care to get rid of the fizzies (carbonation)by skimming off with a spoon before turning on the ice cream machine. The kids wanted to know what the powdery taste was. I will certainly try it again but tweak it just a little. *I also used fat free condensed milk and diet sunkist to keep it low-cal and low-fat

Tuscan Soup

Reviewed: Nov. 20, 2008
This was really good. Smelled delicious throughout the house.Because we like spicy I purchase the hot sausage and also added some red pepper flakes as suggested by others. I used all chicken broth rather than water for added flavor. The one thing that I have will do next time is I will remove all of the stalks from the Kale. I had never cooked with Kale before and mistakenly assumed that they would soften up after cooking. Oops. It was still delicous and I look forward to eating the left overs.

Black Forest Dump Cake II

Reviewed: Jan. 21, 2009
talk about a comfort food. we served warm with a scoop of ice cream on top. i cannot describe how tempted i was to keep on eating this one. the only thing i might change next time is that maybe i will only use half a can of the pie filling and see how that works out. it was a little too much cherry for me. i used the advice of others and sliced the butter very thin so that the top of the cake was pretty evenly covered. i love easy recipes like this one.

Fabulous Fajitas

Reviewed: Jan. 14, 2009
This was the easiest fajita recipe. In twenty minutes I had dinner on the table. I was running low on flour tortillas so I ate mine in a bowl topped with lettuce, tomato and a small sprinkle of low fat cheese. I'll be making this one on a regular basis.

Buttermilk Pie IV

Reviewed: Jan. 9, 2009
Delicious. I decreased the amount of sugar by 1/2 cup and I have to agree with some of the other reviews that it was still pretty sweet. Next time I'll try it with only 1 c. sugar. A great recipe though and chances are I will make it again.

Chocolate Earthquake Cake I

Reviewed: Apr. 4, 2008
Really yummy cake recipe. It was a little mushy in the middle of the cake so will need to add some more time on if I make it again. The parts that were cooked through were tasty though. I found it to be even better the next day.

Chocolate Eclair Dessert

This recipe came together so quickly and so easily. I used the recommendation of Bays Chick and made the chocolate frosting recipe that she included in her review. I liked how this can be made in advance.

Groovy Green Smoothie

Reviewed: Sep. 12, 2008
I was VERY skeptical about this one but was willing to try since I had an abundance of spinach that I needed to use. Very tasty. Even my kids liked it. They thought it was green from a kiwi until I told them. What a great way to get in your servings of fruit and veggies!

Banana Sour Cream Bread

Reviewed: Sep. 11, 2008
Don't bother looking at any other banana bread recipes This one is so delicious. I did divide the batter and used chocolate chips for half and pecans in the other half. I made three loaves and twelve muffins. I cooked the muffins for thirty minutes. Great for breakfast on the run.

Buttermilk Pancakes I

Reviewed: Feb. 4, 2008
I loved these pancakes and so did my children. They were very light and fluffy and I really should have doubled the recipe so that I could freeze some for later in the week. I did make a couple of minor changes. I added some vanilla, replaced refined sugar for natural cane sugar, a couple of tablespoons of flax seed meal disguised with just a few chocolate chips for my children. We served with sliced bananas and sugar free syrup. THEY LOVED THEM!!!

Chocolate Trifle

Reviewed: Mar. 10, 2009
This dessert was fabulous. I used real whipping cream and made my own, sweetening with 1 c. confectioners sugar and 1 t. vanilla in place of the tub of cool whip. I added freshed sliced strawberries between the layers since they are in season right now and the splash of color made for such beautiful presentation. This recipe is absolutely decadent and chocolate lovers will go crazy over this one. Be prepared to share the recipe.
