I am a stay at home Mom of three children. I enjoy running, reading, cooking, gardening. I love dogs and have two. I have been happily married for 14 years. I enjoy swapping recipes. This is my favorite recipe site. I visit frequently for ideas.
My favorite things to cook
I love my veggies and have a meat free diet. The rest of my gang, their carnivores but I still love them and cook their favorite foods. I especially like to cook anything EASY and QUICK. Kid friendly is even better. I love soups of any kind.Especially in the winter. Authentic Italian food brings to mind my favorite vacation ever. Mexican food....yummy. I love foods that I can fix and pop in the refrigerator for later.
My favorite family cooking traditions
Breakfast on Sunday mornings. Pancakes-always trying different recipes for those. We enjoy entertaining in the back yard and often have cook outs.
My cooking triumphs
Not so many triumphs come to mind although I love making pretty desserts. Presentation can be so much fun and bring such satisfaction. Of course taste should be great also.
My cooking tragedies
Nightmare memory would be many years ago cooking for my husbands family (at the time he we were only engaged) I spent the entire day cooking-eager to make a good impression- lasagna from scratch, salad, homemade bread and seasoned oil, fresh grated parmesan only to drop something on the table as we were getting seated and my glass top table shattered in our lap-along with my fantastic meal. My sister in law received a minor cut in the process. I was horrified. Thankfully we can all laugh about it now.

Good for You Greek Salad
I love this one for a super speedy lunch that I can quickly throw together. I love to throw in some chopped avocado and pinch of garlic salt.

Double Layer Pumpkin Cheesecake
This is a wonderful cheesecake recipe! I doubled it and made two. Somehow, I wound up with too much filling so I used my leftovers to make little mini cheesecakes. I had enough to make 6 and my kids went crazy over them. I placed a nilla wafer in the bottom of the cupcake liner, and baked for 15 minutes. Simple to serve and a perfect portion!
