About this Cook
I am 23 years old and LOVE to cook!!! Recently I got diagnosed with cancer and so currently I'm unable to work, so I have a lot of free time on my hands....this is awesome though only because it has allowed me to figure out things that I really enjoy in life. Spending time with my loved ones, and cooking!!!! This is my first time living on my own, away from my family, and so I love cooking and having a nice meal prepared for my boyfriend when he comes home from a long days work! He always says..."we eat good" and I love that! Especially since he does soo much for me! I just feel blessed by all of the people in my life, and cooking is not only something that I greatly enjoy but is kind of a way for me to give back to them...if that makes any sense at all?
My favorite things to cook
Lately I have just truly enjoyed trying out a bunch of new things and seeing what I we like. Some of our favorites to cook and eat are steaks, chicken, anything Italian...we love garlic, boyfriend loves bbq stuff and lately, I've been kind of experimenting w/Asian food. Its funny because I'm Asian myself, but was adopted. So it's a whole new thing for me!
My favorite family cooking traditions
Unfortunately, I dont have any family cooking traditions! :*( My mother doesnt really enjoy cooking like I do (we always had frozen things) and my all of my family lives quite a ways away in other states, so I hardly ever get to see them. I do have a recipe for some bbq meatballs my great grandma makes that we really enjoy!
My cooking triumphs
Basically a cooking triumph to me is anything that I make that either my family or my boyfriend love. Just to know that I cooked them a good meal that they absolutely enjoy makes me feel amazing and is a huge accomplishment in my book!
My cooking tragedies
Um, yes, I've definitely had my share of cooking tragedies......but I'm still learning!!!

Downeast Maine Pumpkin Bread
Wow. This was really good. Thats all I have to say. I was concerned it might be a little "spicey" but it was perfect. Just the right amount of flavor and super moist!!! Ill definitely be making this over and over again!

Burrito Pie
Wow! This was REALLY good!!! My boyfriend, who doesnt care for hardly any sort of mexican food really liked this! After reading the reviews I made some alterations. First, I didnt use any olives cuz we didnt have any. I followed the suggestions of others and instead of mixing the zesty beans in w/the meat I spread on tortillas, which I layered 3 tortillas together in a stack. Oh, Also, when I browned the meat I used some of the Taco Seasoning I on this site for some extra flavor. Very Yummy. Next time, I might try using two layers of tortillas instead of three though.

Taco Seasoning I
This was REALLY good!!! I did make some changes, only to suit our preferred tastes. I cut the chili powder in half because I dont like too much heat, and then only used 1/4 cumin because I've never had it before so wasnt sure if I'd like it. I also just gave a dash of salt (we're not huge salt fans!) I used this with the burrito pie recipe and it was really good! A little heat but not overpowering!
