Chef John's Classic Pot Roast with Winter Vegetables

Fantastic. I made this exactly as written, only in the pressure cooker. 45 min to a fabulous meal! Love the parsnips; they add a really unique flavor. Oh yeah, I added 1/2 cup or so of red wine to the roux.

Pretty Chicken Marinade

This has become part of our regular rotation. So easy and so yummy. Every ingredient can be kept on hand. If it's ugly out, I either broil or use my FlavorWave. Awesome either way.

OMG!! I couldn't believe how much like lobster this tasted. I served it with asparagus and garlic mashed potatoes. 5 people ate for less than $20. Amazing.

Slow Cooker Italian Beef for Sandwiches

My kids ask for this nearly every week. Because it's made in the crockpot, it couldn't be any easier. I serve it on sub buns with provolone or mozzarella slices and sauteed peppers and onions.

Curried Coconut Chicken

This is a totally yummy concoction. The heat of the curry blends beautifully with the cool of the coconut. I serve it with small bowls of chopped apples, peanuts, and raisins for topping. I accidentally bought coconut cream instead of milk, so I used that and eliminated the sugar. You can spice it up by adding extra curry powder or a hotter blend.

Brooke's Best Bombshell Brownies

These brownies deserve their name! They are amazing. Moist, fudgy, super-chocolatey, and melt-in-your-mouth. They are also made with stuff you keep on hand, so they whip up easy and quick when you need to impress.
