Coconut Chicken Stir Fry

We enjoyed this very much. We used lite coconut milk. Next time we will add more than 1/2 t curry because we really like it.

Thai Ginger Chicken (Gai Pad King)

We've been eating Thai out a lot lately. I decided to try some at home. This was a great choice. I did not use the full amount of ginger because I did not have that much. I didn't measure it, but I think I added 2-3 tablespoons. A full 1/2 cup would have been overpowering. I, also, did not add the bell pepper because we do not care for them. The chili paste I used was some I got from the Asian market, so I don't know if it was Thai. We really enjoyed the results. It was pretty quick to make and would be great for a weeknight meal. Next time, I may add more vegetables like carrots and broccoli.

Strawberry Fields

I made this salad last night for dinner. I loved it. The dressing is very sweet, though. Next time, I will cut back on the sugar and/or honey and I may add some pecans or almonds for a little crunch. It is a very pretty salad and would be great to serve to guests.

Nonie's Best BBQ

This is the first time we've made a recipe for the Recipe Group. I had been craving Sloppy Joes, so the timing was perfect. We really enjoyed this. We used half ground beef and half ground turkey because that is what we had on hand. We did not add the white sugar. The leftovers are great, too! We will make this again.

Scalloped Cabbage with Ham and Cheese

I was surprised how good this tasted. I followed the recipe pretty close. I did drain the cabbage/ham mixture before putting it in the pan. I used Velvetta as the cheese. I had leftover ham in the freezer and cabbage that needed to be used. Next time, I will probably steam in chicken broth, instead of water and add some garlic and maybe some other spices/herbs to the cheese mixture. I just felt it was missing a little something.

Pumpkin Chili Mexicana

This is great! I did not add the green pepper because we do not care for them too much. I, also, did not add the salt. The canned veggies have more than enough already. After cooking the turkey, onions and garlic, I threw everything in the crock pot and let it cook on low for a few hours. It was an easy dinner to have while watching the Cardinals in the National League playoffs.

Baked Vegetables I

I followed the advice of others and mixed the oil and the onion soup mix. I , then baked the potatoes and carrots with a little of the soup and oil mixture for 15 minutes before I added the rest of te vegetables. I, also, added 2 small red onions. I did not add extra salt. I got most of my vegetables at the farmer's market. We both really enjoyed it . I will definitely make it again.

Curried Honey Mustard Chicken

We both really enjoyed the recipe. I used chicken tenderloins, so I did not bake it the full time. I broiled it for a few minutes at the end. Next time, I will try it with a little less butter.

Turkey and Quinoa Meatloaf

We really liked this meatloaf. I didn't make any changes to the recipe, but I did bake it in a meatloaf pan. This was my first time cooking with quinoa, but it won't be the last. I can't wait to make it again. Thanks!

Best Beef Dip Ever

This was great. I ate it 3 days in a row and that is unheard of for me. I did use some low sodium soy sauce because I did not have a full cup of the regular. I added horseradish sauce to the sandwich because I love that stuff. I will be making this again. Thanks!

Super-Simple, Super-Spicy Mongolian Beef

We enjoyed this very much. I marinated the meat overnight. I added the full tablespoon of red pepper flakes. Next time, I may cut that back a little even though we did like it spicy. I, also, used low sodium soy sauce. This is a great weeknight dish since it is so quick to prepare.

Grandmother's Buttermilk Cornbread

We made this to go with the Slow Cooker Lentil and Ham soup. It was great. I still have some buttermilk left so I may make another batch to freeze for later. I may try cutting back on the sugar, too.

Slow Cooker Lentil and Ham Soup

We really enjoyed this soup. I used 3 14oz cans of low sodium chicken broth and used the whole small can of tomato sauce. I did not add any water at the beginning, but I ended up adding extra water later. The soup was still very thick. I mixed this up the night before and refrigerated it overnight. The lentils may have absorbed some of the liquid. That may account for needing to add more liquid. This was the first time I have had lentils, but it won't be the last. Thanks for the recipe.

Scalloped Potatoes and Onions

I really enjoyed these potatoes. I followed the recipe fairly closely except I used low sodium chicken broth and light mayo. I did add the salt. Next time, I will check the potatoes as they are baking because I would like them not quite so soft.

Lori's Spicy Chipotle Lasagna

I really enjoyed this recipe. I, too, had trouble fitting it all in one pan, so I used two. Sadly, I forgot to add the basil and oregano. I even grow it in my garden. It still tasted great, though. Next time, I will add the herbs and use a very deep pan. Thanks for the recipe.
