Baked Vegetables I

I followed the advice of others and mixed the oil and the onion soup mix. I , then baked the potatoes and carrots with a little of the soup and oil mixture for 15 minutes before I added the rest of te vegetables. I, also, added 2 small red onions. I did not add extra salt. I got most of my vegetables at the farmer's market. We both really enjoyed it . I will definitely make it again.

Egg Salad Sandwiches

Curried Honey Mustard Chicken

We both really enjoyed the recipe. I used chicken tenderloins, so I did not bake it the full time. I broiled it for a few minutes at the end. Next time, I will try it with a little less butter.

Turkey and Quinoa Meatloaf

We really liked this meatloaf. I didn't make any changes to the recipe, but I did bake it in a meatloaf pan. This was my first time cooking with quinoa, but it won't be the last. I can't wait to make it again. Thanks!

Best Beef Dip Ever

This was great. I ate it 3 days in a row and that is unheard of for me. I did use some low sodium soy sauce because I did not have a full cup of the regular. I added horseradish sauce to the sandwich because I love that stuff. I will be making this again. Thanks!

Super-Simple, Super-Spicy Mongolian Beef

We enjoyed this very much. I marinated the meat overnight. I added the full tablespoon of red pepper flakes. Next time, I may cut that back a little even though we did like it spicy. I, also, used low sodium soy sauce. This is a great weeknight dish since it is so quick to prepare.

Grandmother's Buttermilk Cornbread

We made this to go with the Slow Cooker Lentil and Ham soup. It was great. I still have some buttermilk left so I may make another batch to freeze for later. I may try cutting back on the sugar, too.

Slow Cooker Lentil and Ham Soup

We really enjoyed this soup. I used 3 14oz cans of low sodium chicken broth and used the whole small can of tomato sauce. I did not add any water at the beginning, but I ended up adding extra water later. The soup was still very thick. I mixed this up the night before and refrigerated it overnight. The lentils may have absorbed some of the liquid. That may account for needing to add more liquid. This was the first time I have had lentils, but it won't be the last. Thanks for the recipe.

Scalloped Potatoes and Onions

I really enjoyed these potatoes. I followed the recipe fairly closely except I used low sodium chicken broth and light mayo. I did add the salt. Next time, I will check the potatoes as they are baking because I would like them not quite so soft.

Lori's Spicy Chipotle Lasagna

I really enjoyed this recipe. I, too, had trouble fitting it all in one pan, so I used two. Sadly, I forgot to add the basil and oregano. I even grow it in my garden. It still tasted great, though. Next time, I will add the herbs and use a very deep pan. Thanks for the recipe.

Grilled Tri-Tip with Oregon Herb Rub

This was great! I used garlic powder, instead of garlic salt, but kept everything else the same. It was so tender and very tasty. Next time, I may cut back on the salt even more since we try to watch our sodium intake. Can't wait until we get another tri-tip.

Slow Cooker Thanksgiving Turkey

This was wonderful! I did not use canned gravy. I had some homemade gravy in the freezer from the last time we smoked a turkey. It really flavored the turkey. I will definitely be making this again.

Meatball Grinders with a Yummy Sauce

I tried this recipe because I had some frozen meatballs that I had to use up. I used spaghetti sauce because my store did not have pizza sauce. I used jalapeno jelly because I had an open jar in the fridge and others recommended it. I didn't measure it. I just kept adding until I had enough. I would guess around 4 oz. It tasted great! Maybe I shouldn't review this recipe since I changed it so much, but this recipe gave me the starting point. I will definitely make again. Thanks!

Rosemary Ranch Chicken Kabobs

Wow, these were delicious! I, also put onions and mushrooms on the kabobs. I did not add any salt. I think the marinade would be a good veggie dip, too. Unfortunately, they were just ok as leftovers. Next time, I'll make them when my husband is home and there won't be any leftovers!
