Coffee Creamer

I had been trying to make a good, flavored home made creamer to replace the store bought type, which has so many artificial ingredients. But I was struggling with getting it "just right." This recipe was spot on! I substituted half of the vanilla extract with hazelnut extract to create my favorite flavor. The results were excellent. Farewell, store bought creamer! (One tip: I have a Bella Cucina, which is like a "Bullet" blender, and that worked perfectly for mixing the ingredients together and achieving a smooth consistency.)

Brennan's Irish Soda Bread

This was delicious. I followed the recipe exactly. Yes, the dough is wet, but no you do NOT need to add more flour. Just "knead" it with the spoon if you don't want to get your hands sticky. I needed to shorten the baking time, so I divided the dough into 12 greased muffin cups. It worked great. PLUS it made more of the yummy, crispy edges. We LOVED this and will make it often!!

Breakfast in a Muffin

We did not care for these at all. They were easy enough to prepare, but they had a strange, almost bitter flavor and the texture of the filling was unappealing. Sorry we couldn't say something better :(

Lola's Horchata

I love good horchata and was thrilled to find this highly rated recipe. I made my first batch yesterday. It was "OK" but I didn't think it was "great." Just not a lot of flavor, and pretty watery. I even took others advice and made a syrup with the milk, sugar and last bit of water.

Two-Potato Swirls

I don't like sweet potatoes, but my family does and they are healthy. So I found this recipe while desperately looking for a creative way to prepare them. These are REALLY good!! I ate a whole serving of them. I can't wait to make them at Thanksgiving for our extended family. Oh, one note: this makes a HUGE batch! We used just ONE of each potato (they were large potatoes) and it made enough for 3 people. If I liked sweet potatoes more, I would probably give this five stars!!

Pumpkin Bread VI

I was excited to try this recipe, because the reviews were so good. But I guess because of that, my expectations were really high. I followed the recipe exactly, but found the bread to be bland and sort of mealy. It was slightly better the second day, but still not what I'd anticipated.
