Marinated Grilled Shrimp

I halved recipe for me and hubby. Used ketchup instead of tomato sauce and dried over fresh basil since that's what I had. Cooked on the stove using my griling skillet. We both enjoyed it. Will make again folliwing recipe and will cook on grill. I'm sure it will be even better.

Beefy Cabbage Stew

I tried this recipe since I'd never thought to make a stew with cole slaw mix. I liked the different textures of beans, beef and cabbage but as is the flavoring was bland for us. (I did have to sub tomato sauce for the tomato juice)I added additional spices to perk it up and my hubby really enjoyed it. I took another reviewer's advice and added cheese as a topping. I think it'll taste even better tomorrow.

Spicy Garlic Lime Chicken

I made this for dinner using 2 leq quarters like someone else suggested. Also had to substitute lemon for lime since that's what I had. Loved it and so did my husband! Great addition to my menu. Will try with lime next time.

Spicy Chicken Rice Soup

Delicious! I was looking for a soup to make with my 2 cups of leftover chicken. I cut just about all the ingredients in half accordingly except for the broth - 2 cups wasn't going to be enough liquid, I ended up using about 5 cups. I didn't have carrots so I threw in some frozen peas and used dried parsley instead of fresh. I loved the spice combo - the red pepper gave it a nice little kick. Even cutting the recipe in half, my hubby and I had enought leftovers for lunch. This is a keeper!

Herb Rubbed Sirloin Tip Roast

I made this for my hubby and I tonight. I halved the ingredients for my 1.5 lb. roast and cut back a little more on the salt. Great flavor! I also made gravy with the juice from the meat - delish! No need to add salt to the gravy, all the spices in the rub gave it a bit of a kick. Can't wait to make sandwiches with the leftovers.

Apple Bread

I halved the recipe for one loaf. I took others suggestions and cut back on oil, added applesauce and a bit of nutmeg. Great flavor but not as moist as I expected although it is good toasted. I would give this recipe another shot without altering to see how it comes out.

Garden Tomato Salsa

This was exactly what I was looking for to use up some or our garden tomatoes. I made this to go with tonight's taco soup, chips and guacamole. My hubby and I thought it had a wonderful flavor. I bet it will taste even better tomorrow after the flavors blend more.

Mama's Balsamic Vinaigrette

I don't buy salad dressing anymore since I have found several good ones on this site. This is my fave balsamic vinaigrette! I've also used it to marinade my chicken served w/ a salad. Fantastic!

Mom's 'Sweet 'n' Sours' Pork Ribs

Delish! Served this over rice and enjoyed leftovers today for lunch. I inadvertently bought boneless pork ribs so I could have/should have cut back on cooking time. The meat was a bit overcooked but I'll know better next time.

Red, White and Blue Ambrosia

Very good! The fruit is what brings out the sweetness in this dessert. My strawberries were not quite ripe so this actually tasted better the second day once they ripened. I think chopped pecans will be a nice addition - will try that next time.

Chicken Breasts With Herb Basting Sauce

Chicken Pesto Paninis

Great way to use leftover chicken! I used my square grill pan and toasted the top halves first. I then put the paninis together and placed my heavy Pampered Chef Pizza stoneware on top of the paninis to weigh it down. Let them heat for a couple of minutes until cheese melted and bottom half toasted nicely complete with grill marks! Yummy and easy. My husband and I both enjoyed these!

Sauteed Garlic Asparagus

Very easy and very good! I took the advice of others and used 2 T. olive oil and 1 T. butter and sprinkled w/ parmesan. Such a quick and easy way to fix asparagus. I love the simplicity!

Extreme Banana Nut Bread 'EBNB'

I adjusted the recipe as others suggested - 1/2 white and brown sugars and added a teaspoon of cinnamon and vanilla. Yummy! I like this better than my previous banana bread recipe. Watch the cooking time. Mine was done in about 45-50 min. The recipe can also be halved easily which I did since I only had 1 cup of bananas.
