Roasted Garlic Cauliflower

This was soo good! I was making it for only myself so I used half a head of cauliflower, added WAY more garlic because I love it-probably like 5 cloves and also threw in some baby carrots. I covered it for about 20 mins then took the foil off and cooked for 10 mins more @ 375 degrees. I then added parm. cheese with some panko bread crumbs and crumbled that on top to broil for 3 mins. It was soo filling, healthy, and tasted fabulous!! Oh and it also smelled amazing!! I will def. make this again!! :)

Tomato and Mozzarella Bites

Sooo goooood!! I literally JUST posted this recipe on here as well after finding a similar one a different site. I brought these last night to a picnic and they were a hit! There were none left and I made about 50 of them! I bought everything from Trader Joes-a pack of basil, sweet cherry tomatoes, and mozzarella balls that came in a container with an olive oil/herb marinade. I assembled these like this picture and since the balls were already in a marinade I just spooned a tiny bit of the marinade left in the container over the entire plate! Then I sprinkled a tiny bit of salt and cracked pepper. Also, I used the rest of the basil to cover the plate before arranging these. It's a beautiful presentation! A must have for parties, picnics, wherever!!

Goat Cheese and Spinach Turkey Burgers

I made these last night and they were very good! MMM! I only gave it 4 stars because mine did not hold together and I even added an egg and a little bit of seasoned bread crumbs. Even so, they were fabulous. With one patty I attempted to barbecue, but it def. did not hold together to even flip.. so I pan fried the rest and they were great!! I will def. make again and probably add more goat cheese since it's sooo good!

Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes

Very good ingredients for the salad!! I made this the other day for a baby shower, and it turned out great but I wasn't too please with the dressing. I made the dressing the night before to let it sit and I even doubled it to make sure I had enough per other reviews. I dressed it an hour before the party and I couldn't really taste it at all... it was pretty dry. It didn't seem to matter to anyone else because all the ingredients are soo good alone! Next time I may try a creamier dressing though. Also, I didn't buy pine nuts- cause they are so expensive and I already had tons of walnuts and it turned out great!! Thanks for the recipe!! I'll def. make again just with a change to the dressing :)

Marinated Flank Steak

This recipe was fabulous!! I actually made it for my 2 sirloin steaks, and I have never used my own marinade before!! I basically followed the recipe exactly except I also used McCormick's Grill Mates steak seasoning along with everything else. I marinated my steaks for about 48 hours in a ziploc bag and then pan seared them for about 3 mins on each side, then threw them in the broiler for abut 2 mins. Yummmmy! I will use this again and again!
