After Thanksgiving Casserole

Reviewed: Dec. 31, 2014
While this recipe was great use of leftovers from Thanksgiving. I have to be in the middle of the road with this. And this is me and me alone on my opinion. My family loved it very much. My issue was, I didn't like all the wetness of the gravy and cream corn (because it baked right over the edges of the pan and dripped everywhere in the oven). It made the mashed potatoes very wet and soupy-like (I don't like runny mashed potatoes) and the stuffing was lost underneath. I didn't realize until I tried spooning it out of the pan, that I myself, didn't like the goopy-ness. Again, this is me because my family had other opinions. The gravy needs to be left out and served with over the recipe after the dish is baked, that would appease my senses in enjoying this casserole. However, as is, I myself won't be eating it this way again. I apologize. My family on the other hand likes it as it is.

Halloween Ghosties

Reviewed: Dec. 16, 2014
Every year I make White Chocolate Nutter Butters for Christmas, 1st time I came to Allrecipes to see if there was a recipe posted and this is what I found, while the themed name is for Halloween, it still follows the idea of sense with the ingredients, with extra embellishments of sorts to use for the Christmas theme. It is a favorite for my kids, family and friends and I will continue to every year. TY

Apple Crisp Cheesecake

Reviewed: Nov. 26, 2014
This was a fun recipe for me. Instead of using the traditional springform I went with one of my 10x12 pans because of making assorted cheesecakes in bar form for serving trays. I also chose to make my own graham cracker crust and tripled the cheesecake batter, what I really should have done (I'll know better next round) was also triple my small Granny Smith's, cinnamon & sugar and oats. While the flavor was there, because of my alterations, I didn't pack enough humph for that apple-y goodness (this was my opinion not my family's). The recipe is a keeper regardless of how I made it fit for what I was doing. The apples were seasoned nicely as my hubby and kids said, the crust was good. And the cheesecake was nice, firm and still creamy. I used a water bath method and when it started getting that golden color I needed. I turned off the oven without opening it and let sit in the oven an additional hour before removing. Not one crack or separation in my batch at all. Then I refrigerated over night and cut the next day. It was perfect as everyone that was sampling it said. It's a must try for sure.

Salted Caramel Nut Brittle

Reviewed: Nov. 26, 2014
I ended up having to do a do-over on this recipe. Lord help me LOL!! The 1st time not really reading, I used clear corn syrup...hmm oops, I had banana colored brittle that still harden to the hard crack stage but looked totally wrong. Made a 2nd time and used dark corn syrup and it did the trick. While I didn't have all the nuts for this recipe I improvised with pistachios, banana chips and sugar & cinnamon macadamia nuts with sliced almonds. Worked just fine, however, I could have used some caramel extract in the candy before setting because it didn't have that caramel flavor I was expecting it to have and wasn't used to not putting in extract. That would be the only thing I would do, would be to add 1/4-1/2 tsp caramel extract. And after making 2 batches, waiting 2 minutes to sprinkle on the nuts, is pointless....you need to do it the moment you pour. Because the 1st batch set so quickly on my counters, that when I broke into pieces the nuts flew off with empty pits on the surface. The 2nd batch I sprinkled immediately and 90% of the nuts stayed on and look much more appealing to the eye then the 1st batch. But will totally make again. TY And note, it was also my 1st time using Reynold Wrap's non-stick foil and will totally be using more of it because it was so nice to have it basically remove it's self from the candy unlike other foils that you have to be careful in removing because of shredding. Loved the non-stick foil!

Homemade Spinach Pizza Rolls

The recipe was such a delight to make. I ended up making a pizza dough verses a store bought one and it worked rather well. Nothing negative to say about the recipe, it was a winner and went rather quickly. TY

Apple Cranberry Relish from Mott's®

Reviewed: Nov. 25, 2014
While this was easy to make, I'm not sure I liked the amount of red onion in the recipe. My red onion was extremely strong and over powering. However, the recipe was okay to me. Possibly try again with leaving the whole cranberry sauce & applesauce as is and pulsing the onions with the herbs smaller and combining because the recipe was just like the texture of applesauce when I did it and just served it as a side, as I wasn't sure how else to utilize it any other fashion.

S'more Eyeballs

Reviewed: Oct. 31, 2014
What a fun recipe. I totally didn't read that the marshmallows needed to be cut into half. I used a whole one for each s'more. Making it slightly messy coming out of the pan when cooled...now I know after re-reading it in my review. However, will make again because it was that much fun. The graham crust was really nicely one and had a wonderful crunch factor that we liked. Thanks for posting the recipe!

Spooky Halloween Eyeballs

OMGosh!!! These were the best!!! SO much fun. I can say, that these will be repeat offenders every year now for Halloween. My kids laughed so hard and found them way cool. And got told, I was the best! Shining the apple on my shoulder ;-) I did skip direction #3 because I had already purchased Wilton Spooky Eyes Candy and made a great stand-out impression on the treat and with my family. TY so much.....great recipe.

Unbaked Meringue

Reviewed: Oct. 29, 2014
1st time I've made a no-bake meringue, and it was really good. Was airy, fluffy and light but wasn't spongy spring back like baked meringues...but totally loved it. I colored mine with Wilton Orange food coloring paste with the making of the syrup and turned every soo pretty when drizzling it in to the egg whites. I can see making this again because it was so easy and so quick to make...might have to bypass whip topping on some occasions ;-) TY this was wonderful.

Apple Streusel Pie

Reviewed: Oct. 27, 2014
This recipe was amazing! I sized this down to making 1 pie and it was perfect. The crunch of the streusel was excellent. I made the streusel without the pecans but only added them after I mixed the butter, brown sugar and flour together, then stored in the fridge until I finished the other steps. Then after it baked, I drizzled caramel sauce over the top and everyone was happy happy. TY I will totally make again. Best way to eat an apple pie!

Disappearing Caramel Apple Bars

Reviewed: Oct. 27, 2014
You can NOT have these cookie bars without the caramel drizzle. It's a must as I was told by everyone. Really easy recipe. Everyone enjoyed these. My one child that can't have apples liked the fact I left some bars apple free but sprinkled the spices on top and then drizzled the caramel on it. And the recipe is correct, when they disappeared, kids were like "where'd the go?!" because they wanted more. Super recipe.

Pear and Apple Coffee Cake with Walnut Topping

Reviewed: Oct. 26, 2014
I hate being the barer of rating a recipe 1st especially if I'm giving it a bad review. I do cook & bake GF at home because of family members. SO note, I'm not an expert, but this recipe was epically a disaster. So, I'll break it down on where I hade issues. Direction 1. No specific size springform, so I used a 12in after looking at the ingredients. 1 tsp of melted coconut oil didn't cover much of anything. I had to use more then then a tbsp. Direction 3. There was more butter then coconut flour & I couldn't get it to resemble coarse crumbs for nothing & I had my butter in the freezer for an hour prior, so it didn't melt with working with it. I ended up adding more coconut flour (close to 4tbsp additionally). Direction 5. I mixed wet & dry separately & added together. Everything else was standard to a T. I took my time with this recipe & felt it was going to be good. But 35 minutes into baking it, it was burning on the top, did a prick test for doneness & wasn't ready. So I tented it with foil to prevent anymore scorching. At the 40 minute mark, checked again & the edges of the cake were already extremely dark, pricked again & came out clean. I pulled immediately. Waited the allotted time, removed the ring from the pan, tried to cut a portion only to have the cake crumble & split. The layers didn't bind or marry together at all & the bottom still stuck to the foil. It tasted awful, nothing like it should taste & the fruit was still crunchy. Sorry...was very disappointed.

Cheddar Bay Biscuits

Reviewed: Oct. 24, 2014
Biscuits fluffed up just beautifully. Couldn't ask for a better quick mix biscuit. I did double the cheese to 6oz because it didn't look like it was enough. However, it's a really nice versatile recipe for extra mix-in's and will be my now go to biscuit recipe. Thank you it's a keeper.

Tortilla Pinwheels

Reviewed: Oct. 24, 2014
This is totally weekend comfort grabs for my family. Grabbing quick yummy snack bites is the best. I made this recipe 2-ways, one with the way the recipe was written with ham and one with Johnsonville Italian Sausage(using 3 un-cased sausage links, cooked & drained. We can say we loved them both ways and I found that everyone swarmed the fridge. They were great. One thing I will note is, I don't usually buy already whipped cream cheese, so I doesn't take but a minute or two, to put a block of cream cheese in a bowl and blend with a hand mixer. (saves on the price difference, if there is one.) Recipe is a keeper.

Polish Kielbasa and Pierogies

Reviewed: Oct. 24, 2014
My family loved eating Johnsonville Sausage with onions and pierogies. The recipe was truly simple and easy with pre-made frozen pierogies and came together quite nicely. Will make again. Beats having just plain pierogies when you can add sausage and onions for a nice treat.

Banana Muffins II

Reviewed: Oct. 8, 2014
recipe was so simple and easy from start to finish. My kids really enjoyed this very much. I added about 1/2 cup of walnuts to the batter and then when baked I drizzled a little quick glaze on top with a walnut half. They looked absolutely beautiful and were nice, moist and light, not dense. Will make again. TY

Peachy Fruit Salad

Reviewed: Oct. 7, 2014
LOOOOOOVED!!! this. My grocery store didn't have peach pie filling, so I took the juice from 2 24oz cans of sliced peaches and thickened up the juice with cornstarch and cooked until really thick. (Don't ask exact measurement, because I winged this part in desperation, LOL) However, followed the rest of the salad with an additional 1/2 cup more of grapes and added 1 cup of fresh strawberries...oh holy cow was it fantastic. Better then any canned fruit cocktail and now going to be on many feasts and family gatherings from now on!!! TY so much suesee ;-) it's the bomb!

Cindy's Awesome Clam Chowder

Reviewed: Sep. 26, 2014
Easy recipe tasted really good, it was well liked. However, I'm going to leave off the potato skins the next time as, it was something I found that I preferred after making the recipe. And I'm more of a person that likes a more intense clam/seafood flavor, so I'll be using seafood stock or more clam juice in place of the water addition in step 2. However, will be on rotation for the family as they liked it very much.
