My favorite family cooking traditions
Funny but true: Cooking traditions men sit in the recliner and women in the kitchen...lol My family is always in the kitchen. My sister and her family, my parents and my family celebrate Christmas in January. Due to distance and work related jobs. Every year we plan what we are having ahead of time. Our tradition is usually food we've had abroad growing up overseas. Normally with Asia influences. It's always a special treat when we normally don't make the dishes often throughout the year.
My cooking triumphs
Unknown to me when I came up with a chicken and dumpling recipe of my own, my father was floored & delighted and told me it tasted just like his mother's.......My mom dropped her jaw because it was better then her's. It's a staple with my husband and kids.
My cooking tragedies
I had found a recipe for a Pretzel Pie(like Pecan Pie), thought it looked good and I didn't follow the recipe when it said unsalted pretzels. I just grabbed the normal stuff with the salt on it, made the pie, and my dad and husband were painting with thrist. And making weird pickle sour expressions, when I realized the pie was over salted. Oopppss! I never made it again.

Halloween Ghosties
Every year I make White Chocolate Nutter Butters for Christmas, 1st time I came to Allrecipes to see if there was a recipe posted and this is what I found, while the themed name is for Halloween, it still follows the idea of sense with the ingredients, with extra embellishments of sorts to use for the Christmas theme. It is a favorite for my kids, family and friends and I will continue to every year. TY

Apple Crisp Cheesecake
This was a fun recipe for me. Instead of using the traditional springform I went with one of my 10x12 pans because of making assorted cheesecakes in bar form for serving trays. I also chose to make my own graham cracker crust and tripled the cheesecake batter, what I really should have done (I'll know better next round) was also triple my small Granny Smith's, cinnamon & sugar and oats. While the flavor was there, because of my alterations, I didn't pack enough humph for that apple-y goodness (this was my opinion not my family's). The recipe is a keeper regardless of how I made it fit for what I was doing. The apples were seasoned nicely as my hubby and kids said, the crust was good. And the cheesecake was nice, firm and still creamy. I used a water bath method and when it started getting that golden color I needed. I turned off the oven without opening it and let sit in the oven an additional hour before removing. Not one crack or separation in my batch at all. Then I refrigerated over night and cut the next day. It was perfect as everyone that was sampling it said. It's a must try for sure.

Salted Caramel Nut Brittle
I ended up having to do a do-over on this recipe. Lord help me LOL!! The 1st time not really reading, I used clear corn syrup...hmm oops, I had banana colored brittle that still harden to the hard crack stage but looked totally wrong. Made a 2nd time and used dark corn syrup and it did the trick. While I didn't have all the nuts for this recipe I improvised with pistachios, banana chips and sugar & cinnamon macadamia nuts with sliced almonds. Worked just fine, however, I could have used some caramel extract in the candy before setting because it didn't have that caramel flavor I was expecting it to have and wasn't used to not putting in extract. That would be the only thing I would do, would be to add 1/4-1/2 tsp caramel extract. And after making 2 batches, waiting 2 minutes to sprinkle on the nuts, is pointless....you need to do it the moment you pour. Because the 1st batch set so quickly on my counters, that when I broke into pieces the nuts flew off with empty pits on the surface. The 2nd batch I sprinkled immediately and 90% of the nuts stayed on and look much more appealing to the eye then the 1st batch. But will totally make again. TY And note, it was also my 1st time using Reynold Wrap's non-stick foil and will totally be using more of it because it was so nice to have it basically remove it's self from the candy unlike other foils that you have to be careful in removing because of shredding. Loved the non-stick foil!
