Let's talk about Beef for a sec...

I have cooked, boiled and broiled, baked, fried, grilled, roasted, and even tar-tar'ed a great many of a beef dinner in my lifetime. Some good, some bad....and some impossibly the best thing I have ever eaten before, stems from enjoying beef.

Now, everyone has their own life style of eating. But I enjoy eating meat. With my family of 6, I cook beef at least 2-4 times a week. Whither it be, ground or roast and the occasional ribs. It's great simple to have on hand at any given notice with hundreds of different ways to prepare it. 48% of one 3 ounce portion is derived of protein. And I'm all about filling my family up with good proteins.

It's been almost 5 years since I choose to have gastric bypass. So protein intake is utmost importance. To maintain healthy muscle mass and body functions, I must get at least 60-65 grams of protein daily. Here's 2 things I didn't know about beef:

it's high in B-12, helping brain functions

& it's high in selenium, that help protect cells from damage

The neat thing about the "Beef...It's What's For Dinner Site", is the Butcher Counter . There you can select the choice of meat cuts you are looking for and it helps you with telling you, what's considered types of steak, roasts, grounds and specialty selections. The most affordable is of course, ground beef. And when I'm in a pinch and I'm out...I hook up my grinder for my Kitchen Aid and ground down a roast. Saves me from driving to the store on a few occasions. Anyway, I wanted to tell you a little about the BIWFD site. Go check it out, see what kind of fabulous recipes they have in store.

scox...it's not my recipe, it is a recipe that belongs to a friend to a bunch of us here on Allrecipes that passed away just recently. I'm happy to share her recipe with you. Here's the link: http://allrecipes.com/personalrecipe/62168559/wedding-gift-spaghetti-sauce/detail.aspx The only think I did differently was not add the extra water, because we like thick and chunky. It's just wonderful!

My favorite things to cook
Asian, Mexican, Multi-cultured foods, Low-fat, Low-sugar, Stews, casseroles, slow cooker meals and baking......Everything!!
My favorite family cooking traditions
Funny but true: Cooking traditions men sit in the recliner and women in the kitchen...lol My family is always in the kitchen. My sister and her family, my parents and my family celebrate Christmas in January. Due to distance and work related jobs. Every year we plan what we are having ahead of time. Our tradition is usually food we've had abroad growing up overseas. Normally with Asia influences. It's always a special treat when we normally don't make the dishes often throughout the year.
My cooking triumphs
Unknown to me when I came up with a chicken and dumpling recipe of my own, my father was floored & delighted and told me it tasted just like his mother's.......My mom dropped her jaw because it was better then her's. It's a staple with my husband and kids.
My cooking tragedies
I had found a recipe for a Pretzel Pie(like Pecan Pie), thought it looked good and I didn't follow the recipe when it said unsalted pretzels. I just grabbed the normal stuff with the salt on it, made the pie, and my dad and husband were painting with thrist. And making weird pickle sour expressions, when I realized the pie was over salted. Oopppss! I never made it again.
