Beef and Irish Stout Stew

This is a good recipe and the gravy is very rich and flavorful. I simmered the stew the last 45 minutes with the lid off to reduce the gravy and intensify the flavor. Adding cubed potato and turnip might add a little something extra to the meal.

Enchiladas Verdes

My wife and I enjoyed these enchiladas. Very different than typical Tex.Mex. that you get in a cafe. I would say to pay attention to the statement to not over do the cheese and crema.

Chipotle Crusted Pork Tenderloin

I went by the recipe except that I injected the tenderloins with sweet chipolte lime sauce. Everyone that tried it was doing backflips until they got too full to jump anymore. You could inject it with any complimentory sauce that you have or prefer, like plum chipolte sauce or raspberry.

Cajun Appetizer Meatballs

This is a very good recipe. I used Tony Chachere's original creole seasoning and it was a little to salty with the amount called for in the recipe,next time I make these I will use less. I also used Japanese bread crumbs and they are excellent.

Bada Bing Bada Banged Potatoes

Key West Chicken

After reading the other reviews I doubled the lime juice and marinated the chicken in a foodsaver bowl with a vacum on it to help the marinade permeate. Let sit for six hours then put on grill. It still came out a little mild but was good. Then I put a little salt on it and the salt killed the taste of the marinade.

Out of this World Turkey Brine

I have smoked two turkeys using this brine and they were the best birds I have ever cooked. I used a 5gal. bucket for brining and put ice in it because it wouldn't fit in frig. Covered top with lid and added more ice as needed.

Slow Cooker Turkey Breast

I used a whole fryer instead of turkey and it was goood. I wouldn't trust the cooking times listed,I checked mine with instant read thermomater untill it read 160, about four hours in my pot.It was perfect and moist thru out.
