My favorite things to cook
I love making things that are quick and easy, but taste like I've spent all day in the kitchen. I especially like trying any recipe I can make in my slow cooker and bread machine.
My favorite family cooking traditions
In my family we love to make and eat desserts. Usually at family dinners during the holidays we have more desserts than anything else!
My cooking triumphs
Learning to make recipes beef and dairy-free. My son is allergic to beef and all dairy products, which includes not only milk, yogurt, cheese, and whey, but butter as well. During the past year I have learned to substitute soy, rice, and vegan products in my recipes and not alter the taste.

Norwegian Waffles
This recipe is wonderful! Its very quick to make and I really like the fact that you don't have to seperate the egss like you do with some waffle recipes. I needed to make this dairy-free, so for the 1 3/4 cups of milk I substituted 1 cup of unsweetened soymilk and 3/4 cup of soy creamer and this worked well. At first I was concerned that the batter was a little runny, but after letting it sit for about 5 minutes while my waffle iron heated up the batter thickend a little bit and was fine.

Lentils and Rice with Fried Onions (Mujadarrah)
I had only eaten lentils once before and didn' like them. So, I tried this recipe to use up some lentils I had purchased for the other recipe that I ended up not liking and this was great! Even my picky 18 month old ate this dish. Another plus is that it is very simple to make.
