Mashed Potato 'n' Parsnip

Delicious! I love the mix of flavors. It is so creamy and yummy! I made double and with just me and my boyfriend there were no leftovers. We both got seconds (and...uh...thirds) of it!

Sloppy Joes II

Yum yum! This tastes JUST like the name brand, only better since I know it doesn't have all sorts of nasty preservatives in it! We love garlic so I added in three minced garlic cloves with the onions/peppers. I also minced up some jalapeno slices too. Yum.

Baked Kale Chips

YUM! Healthy, crispy, delicious, and oh-so-addicting! I made them for a party and I just kept munching on them - they nearly didn't make it to the event! Lol. WILL MAKE AGAIN!

Cookie Mix in a Jar III

K, I'm confused. How is 5 cups + 3 teaspoons supposed to fit in a 4 cup (1 ounce) jar? I pushed a pushed but alas it didn't work. I ended up cutting the oats down to 1 1/2, raisins to 1/2 and sugars and flour each by a bit. I'm giving them as gifts and I'm nervous.

Garlic Green Beans

They were ok. The garlic/parm totally fell off so we just had to spoon the sauteed garlic onto our plates and take a little forkfull with out green beans. If the topping were to stick better it would be 5.

Salmon with Lemon and Dill

Buttery Rolls

Double Tomato Bruschetta

This is one of my go-to recipes for groups and pot-lucks. I put the whole mixture of tomatoes in a large dish and then put mozz cheese on the whole thing and bake. I then put a spoon in it and put some veggies and toasts on the side and let people serve themselves. Easy, quick, and always gone in a flash!

Hot Artichoke and Spinach Dip II

I put in three cloves of garlic instead of the one (I'm a garlic fiend, what can I say?). It was delicious. I served this with carrot and celery sticks as well as some white tortilla chips. It went so quickly! Make double because it's THAT good.

Bacon Wrapped Dates Stuffed with Blue Cheese

Yum yum yum! And can I just say...YUM. I used goat cheese instead of blue, and cooked for 30 minutes. I also used thick-cut bacon and it was quite a bit bacon-y, but that was fine with me (although next time I will use "regular" sliced bacon). They were delicious, and such a "wow" factor too! Everyone was so impressed. Directions were easy to follow. I will certainly make again.

Spinach-Stuffed Flounder with Mushrooms and Feta

I substituted red snapper for the flounder and added 4 gloves of garlic (I also used a feta in garlic oil...we're a little garlic crazy in my house!) as well as used more mushrooms than the recipe called for. It was really tasty. My boyfriend was amazed at how healthy the meal is too (fish, lots of veggies, no butter and very little oil). It was really simple to make as well! I will definitely use this recipe again, and it will be great for stuffed chicken as well. Love recipes like this! They are so versatile AND delicious!

Simple Oven Fries

These are a great basic fry recipe. The herbs and seasonings can easily be changed/varied depending on what flavors that you want. Instead of baking potatos, I used fingerling potatoes in a trio of colors (red, yellow, and purple). Great basic recipe to start with!

Banana Pancakes I

This is a great, very basic, and easy pancake recipe. I have this memorized and make it whenever I want to whip up something tasty for breakfast (and it really impresses my friends that I can make pancakes from scratch...little do they know how simple it is!). I love the banana flavor in these, and also enjoy adding in nuts, chocolate chips, or blueberries (although it's also even tasty plain!).

Molten Lava Cookies

These cookies turned out great, and were a cinch to make! Instead of chopping up baking chocolate, I simply lucked out buying some chocolate baking chips (they were like large chocolate chips). This refrigerated pretty well (which means that it would be quite easy to make the dough ahead of time and then bake them later that night or so when you wish to serve them). The dough was VERY easy to handle, which was great, and made putting the filling in quite easy. The size of the cookies is great, and the chocolate flavor is rich, but not disgustingly overpowering (they're great with a cool glass of milk!). I definitely recommend these cookies and would be pleased to use them again. My friends and family raved about them (my boyfriend even called me up AT WORK to explain how much he loves them, haha!).

The Best Lemon Bars

I, as well, had to cook the crust for an additional five minutes or so, and I used 3/4 Cup lemon juice (fresh squeezed) as well. The only reason I did not give this five stars is because I had to bake my custard for nearly 45 minutes (I baked it for the 20 as written, then let it sit in the firdge over night, but it was still all liquidly, nearly water-like!). I then baked it for another 14 minutes and it turned out well, but the edges had gotten a bit crusty, so I just cut them away. But after all that the bars turned out fabulously. Although, it did seem like my crust puffed up a bit too much for my liking, I'd prefer a smaller crust, like only 1/6 of an inch, so I shall use less of the crust next time (and there WILL be a next time!).

Creamy Chocolate Cupcakes

I only made a couple of changes, but this recipe turned out pretty great as is: I used 1 Cup milk in place of 3/4 Cups water, and I only use a half cup of mini chocolate chips, instead of the full cup, and I omitted the walnuts as well. The cheese cake mixture sunk quite well, but I used a tip from another rating and put a bit of bater on top (although, when I sliced them open, I saw that the cream cheese did a very good job at settling towards th bottom anyhow). My boyfriend, who isn't even a big fan of desserts told me "Wow! You have to make these more often!" Which means that this recipe HAS to be rated 5 stars. :D

Brownie Cheesecake Bars

I actually only used the cheesecake topping of this recipe (I used my favorite brownie recipe, then just topped it with the cheesecake mixture, and baked) and it turned out super well. I will definitely keep this recipe in mind when looking for a fun way to liven up brownies when I'm bored of the same old thing. It took about 10 minutes longer to cook than the recipe stated for me (perhaps that is the fault of my old oven), and I was suprised that it turned out so well, because with about those 10 left to go I had to leave, so I just turned off the oven and kept it closed, and let the residual heat keep it cooking. They turned out fantastic! I got many compliments on the pairing and many of my friends have told me that this is their favorite thing that I've baked EVER. I was quite happy with this, thanks for sharing the recipe/idea. :)
