German Pancakes II

INCREDIBLE recipe! Very impressive when you take out of the oven because it puffs up (but does flatten after cutting/resting for a bit). SO much easier than pancakes! I used two 9inch round cake pans to cook the recipe in, baking in a 400 degree oven for 20 minutes. Also followed previous reviewers recommendation and added 4 T. sugar, 1 t. vanilla, and a dash of nutmeg. Sprinkled with powdered sugar after I removed from the oven. For big syrup lovers, you may want to cut sugar down to 2 T. as it was sweet enough for me without syrup. Would be lovely with fresh fruit! Thank you Bren! You've saved my family from enduring any more of my failed traditional pancake attempts!

Rice Surprise

Carrot Rice

EXCELLENT! I was surprised reading some of the lukewarm reviews on this. My family would eat this rice every meal if it was availble, including my kids. Key to the recipe is cooking the rice (must be fragrant/basmati) according to the package directions. Try this - I really can't imagine being disappointed. It is a great compliment to Indian and non-Indian meals. (Peanuts are optional - still great without.)

Best Big, Fat, Chewy Chocolate Chip Cookie

I have tried quite a few chocolate chip cookie recipes, and this is by far the BEST! Don't be alarmed by the reviewers who say theirs turned out flat. Because the butter is melted, you MUST refrigerate these before baking (long enough so they get hard, an hour or two, or speed up by putting in freezer). Also, you will want to wait a bit to eat as they are a bit gooey at first. Take the cookies out of the oven when the edges are just turning brown, leave on cookie sheet for a few min, and then let rest a bit longer to ensure best results. If you want these cookies to stay moist, put in sealed container after baking. If you want them crunchy, leave them exposed to air. Whatever you do - don't pass these up. My friends wonder what amazing bakery I buy these at whenever I make them.

Grandma's Five Cup Salad

Loved this! Didn't add quite as much coconut as we have some non-eaters in our family, but it was still wonderful. Also mixed a bit of cream cheese in with the sour cream before adding fruit. Really yummy!

Moussaka

Thank you, Peggy! I always order Moussaka in Greek restaurants but had dismissed the option of cooking it at home. This dish turned out wonderful - and although takes a bit of prep time - was SO worth it. Followed the recipe exactly except: 1) Cooked Eggplant without any oil (was afraid that they would taste funny as they looked burnt after being cooked, but were fine), and 2) substituted equal parts of oregeno, basil, & thyme for fine herb mixture. Also only had 2 eggplants around but it was enough (although 3 is probably a more appropriate amount). If you like Moussaka, you MUST try this recipe!

Amy's Garlic Egg Chicken

If we could give this recipe six stars we would - Kids and Adults both love this tender chicken delite! I like to cut the chicken breast into bite-sized pieces *before* marinating. After a mere 4 hours in the egg/garlic mixture, the chicken is SO tender and the bite-sized pieces are perfect for my kids. Also noteworthy is that the dish can be a bit salty if you add the recommended salt, use salted butter, and seasoned breadcrumbs. We prefer it with no salt added, unsalted butter, and unseasoned bread crumbs. Great with an Italian themed dinner (ie pasta with tomato sauce, salad, and garlic bread).

Awesome and Easy Creamy Corn Casserole

YUM! Used Jiffy corn bread mix in recipe. Unlike some reviewers thought the taste was wonderful as posted. We love it as a sidedish on Meatloaf nights.

Pumpkin Chocolate Chip Muffins

Incredible muffins! Used mini muffin tins to make bite sized morsels and they turned out beautifully *and* they were so easy! Reduced baking time to 15 minutes for the minis. I also substituted mini chocolate chips. Great flavor - and as others have said - a wonderful surprise!

Honey Baked Chicken II

Whole family loved this! Easy, no-fuss recipe with great flavor. The house smells wonderful as this is cooking! Could use any chicken pieces and just adjust cooking time accordingly. Especially loved the crispy skin the glaze gave the chicken.
