Carrot Banana Bread

I really like this bread, though I would like a stronger banana flavor, and I think the addition of vanilla would compliment it as well. It's very versatile too. I have a glut of winter squash from my garden, so instead of grated carrots, I used shredded winter squash. It was very moist. I took the suggestion of another reviewer and mixed all of the wet ingredients with the bananas, squash and pecans, and then folded in the dry ingredients for a one bowl recipe. This is a keeper!

Easy Morning Glory Muffins

This is a delicious and very easy recipe. I subbed canned pumpkin for the oil, dried figs for the raisins, and I didn't have an apple, so I left that out. Next time I think I'll add a little cardamom just because I love it not because I think the recipe needs it. I also baked this in a loaf pan rather than a muffin pan. It makes one large loaf.

Raspberry Chocolate Chip Muffins

I questioned whether I would like this recipe, but I had all the ingredients to make it, so I decided to give it a try. Instead of raspberries, I used blackberries and blueberries from the garden, and instead of making muffings, I used a loaf pan and baked it in my solar oven. It took about an hour to bake in the solar oven. Both my husband and I love it, and we can hardly wait to have it with coffee in the morning.

Blueberry Lemon Loaf

OMG! This is exactly what I was looking for when searching for a lemon blueberry loaf. The sour cream in the ingredients caught my attention, and the taste is outstanding. A pretty loaf too. I zested a whole lemone and added about a Tbl of lemon juice to the batter. I also didn't have quite a 1/4 cup of SC, so I top it off with some yogurt. I can hardly wait for breakfast in the morning with a cup of coffee!

Honey Mustard Dressing

I have been searching for the perfect honey mustard dressing without mayo and have found it! I didn't have any lemon juice so I cut the honey back to 1/4 cup, and it was perfect. I subbed a nice fruity olive oil too.

Green Tomato Cake

This is so delicious! I have been experimenting with green tomato recipes and used the last of my green tomatoes for this. Now I wish I had more green tomatoes! This is a definite keeper for next year.

Catherine's Spicy Chicken Soup

A great base soup to make your own. I used boneless skinless chicken thighs, varied the seasonings a bit using what I had on hand, and it was great. Like another user, I made it a one pot meal. Chopped the veggies and chicken and sauteed them in one pot. Added the rest of the ingredients and simmered.

Jalapeno Hot Sauce

I agree with other reviews, too much vinegar; otherwise, I would have given it 5 stars. I used 1/4 cup white wine vinegar, and it seemed like just enough. I left all the seeds in my peppers, and it was super hot. I also added an extra garlic clove and about a Tbl of sugar. This is a sauce that will get better over time, so I am looking forward to how it develops. A great way to use up the jalapenos from my garden.

Ranch Dressing II

I use buttermilk instead of sour cream and use fresh parsley and chives from my garden, a dill seasoning blend instead of dill, garlic and onion powder because the blend has all three. My husband was never a big ranch dressing fan until I started making this recipe. I've used it on salads and as the "sauce" for pasta salad with fresh cucumber and cherry tomatoes. Delicious!

Veggie Burgers

Love the texture, but they definitely need some spice or some type of seasoning. I added some cajun spice to mine. Also, I mixed in 1 cup of flour and used bread crumbs to bread them after shaping them. Washing my hands after forming 2 helped keep them from being too sticky. The recipe made 8 good sized patties for me. They froze really well, so I will be making a batch for the freezer to use up some veggies from the garden. Much better than the frozen ones you buy at the store.

Connie's Zucchini "Crab" Cakes

I was a bit skeptical but thought so many good reviews can't be wrong. I was pleasantly surprised! Didn't have Old Bay, so used a Blackening Spice blend instead. I salted and drained the zucchini and then squeezed out the water in a dish towel. Served the cakes with chipotle mayonnaise. Now I can't wait for the zucchini in my garden to mature.

My Country Style Steak

I get alot of venison cube steak from my dad and have never been a big fan, so it usually sits in my freezer. I thought I would try again, and found this recipe to be the best cube steak I've ever tasted. It was SO tender. Did modify the recipe as follows for the pressure cooker: After browning steak and removing from pressure cooker, I deglazed the pan with 1 cup water, added 1/2 package onion soup mix, returned cube steak to pan and cooked under pressure for 10 minutes. Quick released pressure and added one cup milk to pan, heated to a simmer, stirring to combine until gravy thickened.

Herman Pancakes

Yummy! I did add some vanilla extract like another reviewer suggested. My husband and I loved these pancakes. I had to stake my claim or he would have eaten them all. Next time I plan to add something extra like chocolate chips or blueberries for variation.

Cranberry Sauce I

Very easy to prepare. I added a touch of cinnamon as suggested by others, which gave it an extra dimension of flavor. This doesn't even compare to the canned stuff, which I never liked. This was delicious!

Sourdough Bread III

This bread is wonderful! Nice texture and good zing from my starter. I made the dough in my bread machine and then divided it into rolls, cooked some and froze the rest. I could have eaten every roll I baked. Now I can't wait to bake the frozen ones. I didn't have wheat germ, so I substituted ground flaxseed, which gave it a nice multi-grain look.
