Chocolate Cream Pie II

Reviewed: Oct. 27, 2013
Very good pie. I used 1 tsp strong coff33 and the 4 T of cornstarch. Used 2 C 1/2/ and 1/2 & 1 C whole milk. I am no longer willing to "stir constantly until thickened" on a burner for any recipe. I use the microwave in short bursts and whisk well about every minute after the first 3 minutes until it's the desired thickness. Took about 5 minutes total in a high power microwave. I also preheated the milk for about 3 minutes on 70% power to make it mix well before I added it to the egg/sugar/cornstarch mixture. Used a high grade cocoa (Penzey's) and it was silky and nicely chocolately. Set up easily.

Pepper-Mint Limeade

Reviewed: May 27, 2012
I used frozen limeade. 4 lg cans + 2 cans water each. One 2 liter bottle club soda added just before serving. You need at least 5 mint leaves muddled per can to even taste it. I used 2 jalapeƱos, seeded and sliced overnight. Not enough. Soooo, I seeded another one, ran it in the processor, dumped it in and stuck it back in the fridge or another couple of hours & strained it right before serving. It was the hit of the party.

Spaghetti Pie III

Reviewed: Aug. 10, 2007
Great with a few changes. Use a high quality flavorful spaghetti sauce; I suggest one with Italian sausage. I combined the pasta and sauce which made it very moist and no dry noodles on the bottom. I added a chopped whole onion & one tsp minced garlic and sauted that before browning the beef.

Eggnog Quick Bread

Reviewed: Dec. 23, 2005
Great eggnog flavor; very moist. I did not hink it needed any glaze. Do make these changes: 2C eggnog ; 1/2 butter & 1/2 oil instead of butter only; 1/2 t. nutmeg; 1 box INSTANT vanilla pudding (added dry).

I baked this in a 350 oven for about an hour. I added the glaze the last 15 minutes or so. Very tasty.

Grandma Minnie's Old Fashioned Sugar Cookies

Reviewed: Feb. 12, 2005
Not worth the effort. unlike other reviewers, I did not need to add extra cream. The dough was fine following the recipe exactly. I chilled it for 3 hours. If you can't roll out a pie crust, don't even try this recipe. Even cold, it stuck so much I had to add way too much flour to get it to roll out without sticking; then I lost my religion trying to get it off the board once you'd cut it with the cutter and I had great difficulty keeping the dough the shape of the cutter. I knew adding so much flour on the board would probably ruin the flavor and it did. Frankly, I wish I'd just cheated and used the store bought dough; it couldn't have tasted worse and it would have saved me an hour.
