About this Cook
Never cooked really until I was married. Even then, it was difficult for me to even touch raw meat. It grossed me out!
My favorite things to cook
Whole foods with natural seasonings. I am most satisfied when I can cook something from scratch without the use of ingredient derived from chemically processed sources and without preservatives/ additives. Everyone can eat more cleanly!
My favorite family cooking traditions
Really, there are none sadly. From the most memorable Lemon Cake down to my Aunts Chili, none were never made from scratch! I grew up in a commercialized mass produced, processed food era when Hamburger Helper was considered healthy merely because the commercial said so! I'm changing that. ;)
My cooking triumphs
Hmmm,...I don't know. I guess I should say my cooking triumphs are when I get a recipe right and/ or don't over cook something. LOL!
My cooking tragedies
Many! I forget about such things. Usually it revolves around me making simple mistakes.

Mom's Zucchini Bread
Although I replaced three ingredients with natural alternatives and added blueberries, this came out moist and sweet. I was able to cut half the calories too! I replace the the flour with whole wheat. Used 1c applesauce instead of oil and used 3/4 honey instead of sugar. I enveloped 2c of blueberries before diving the batter into two loaf pans. I baked at 325 for 40min in a convection oven. YUMMY! My version came out at 112cal., 1g fat, 27.5mg chol., 131.3mg sod., 22.6g carb, 2.8g fiber, 11g sug. and 3.3g protein per serving.

Sauteed Portobellos and Spinach
This was FABULOUS! My mouth still waters from the remnants of the ingredients! I did use fresh organic spinach, less salt, less dried basil, more pepper, the exact recommended red wine and fresh parmesan ingredients. I could taste every single natural flavor of this dish and could not be more elated! I will definitely use this recipe again and will share with my friends. A great accompaniment to any beef dish. I LOVED IT!
