Cooking and baking come are almost therapeutic to me. I love to cook with those I love in mind and make it a little extra special for them.
My favorite things to cook
I love to cook just about anything. Favorites are fresh quality ingredients. A little off the beaten path for me lately is I've been experimenting with very simplified versions of my favorite recipes to get a collection of meals my family likes that we can keep the ingredients stored on hand and could live off of in times of emergency or disaster if necessary.
My favorite family cooking traditions
We prepare dinner and sit and eat dinner together at the dinner table. It's my favorite time of everyday. Many times the dinners are really simple.
My cooking triumphs
Anytime some one is happy because of eating something I've made. Makes me happy.
My cooking tragedies
Any time I'm trying to multitask, it's probaby not going to turn out how I hope. I find it's a good idea to really pay attention to be present and mindful of what I'm doing while I'm cooking.

Amish White Bread
Okay made this again and had to edit my review to include: I reduced the sugar as other reviewers suggested just to see. Oh my word!! Probably even more delicious, if that is possible. & I have a sweet tooth the size of Texas and even loved the sweetness of the original recipe. Make this, you wont be sorry. Very delicious and super easy!! I substituted olive oil for the vegetable oil and thought it still had a great texture that we loved. My rising times were longer but it could have been due to it being a very cold day. To help it along, I had the dough raise in the oven with the light on and boiling water. The taste of this bread is so yummy, we ate it without anything on it even. I will definitely be making it again. I may reduce the sugar as some other reviewers have recommended. I loved the sweet taste but don't necessarily need that sweetness for a good sandwich.

Italian Bread Bowls
Great recipe as written. I noticed several reviews recommended making 6 bowls instead of 8, saying 8 was not big enough. So I made 6 too. They were huge. I think 8 would have been a much better size. Next time I'll stick with 8.

Buttery Soft Pretzels
These were excellent. One huge regret, I didn't double the recipe! I will from now on. The baking soda bath added a nice flavor and color. I think next time I make this I'll play around with letting the shaped pretzels proof for a bit and boiling for about a min in the baking soda bath. Possibly an egg wash before baking too. I want to see if I can get the outside a touch chewier but these were far better than the mall pretzels in my opinion. My 9 year old daughter figured out a way to shape them quickly. She formed the dough into a small thick stick and then picked it up by both ends and swung it around like a jump rope until it was long and thin. Worked great and really fast. 450 was too hot for our oven so we lowered it to 400 and they turned out great, perfectly browned and cooked inside after 8 minutes. We only needed to use about 4 cups of flour. Thanks for a great recipe! We will definitely be making these again!! What a fun activity for kids too.
