Chicken Breasts Pierre

WOW! I was soo pleasantly surprised by this dish. All the different flavors come together so perfectly. My BF Cleaned both his and MY plate, whereas a typical chicken breast dinner may go slightly unfinished as the chicken around here comes from Mutant huge breasted birds. He was raving about this, it was great. Made a few substitutions due to what I had on hand. First off I did not have canned tomatoes, only 2 fresh Roma tomatoes. I boiled quick to get skins off and diced them. I almost did not make it because I found no other reviewers with this substitution but it was MORE THAN FINE!! I added diced onions since i didnt have stewed tom. I also subbed Chicken broth for water. I used the same sauce quantity for only 2 servings of chicken (one HUGE breast butterflied) and I am glad I did. I reduced the amount of chili powder and brown sugar by about 1/2 tsp, it was perfect! Oh and there is always room for an extra clove of garlic in any dish, this one is no exception. I did not dredge in flour either, due to that slimy texture that sometimes happens, I am sure the flour addition is to aid in sauce thickening, but I found that a tsp of cornstarch/water worked just fine to thicken slightly. Once again I really loved the flavor and it was really simple, quick and easy THIS IS A MUST TRY!! I imagine anyone who rated this badly may have not had the exact ratio of spices right, idk or their tongue needs some practice with delicious FOOD!!!!

Strawberry Pie II

I didnt really enjoy the gelatinous aspect of this recipe and I used double the strawberries and kept some of them halved (I was going for a Marie Callendars Fresh Strawberry pie look) see my pic! Also this pie really only seemed to keep for 1-2 days before the berries got too juicy and the gelatinous stuff started to turn an opaque purple color....icky But it tasted great the very first day. Overall I doubt I will use this recipe again, maybe just a simple syrup glaze over the berries next time.

Eggplant -- Easy, Good and Tasty

YUMMM I tried both sliced tomatoes and diced, I liked the diced better easier to cut thru w/ a fork. I also flipped mine half way through and even cooked em toppingless afterwards for a bout 4 mins, then added the rest of the ingredients. Also I did not have all shred. parm. on hand so I subbed some w/ Mozz and a few i sprinkled with Feta. To the Feta version I added sliced olives and those were great as well, oh and all had a bit of fresh basil, super easy and quick.

Italian Sausage Soup with Tortellini

YUMMMMM! I added spinach as well as a small handful of Bobs Red Mill Veggie soup mix I had on hand. Served with Fresh baked French Bread and Salad, cant wait to have leftovers for dinner tonight!

Broccoli, Rice, Cheese, and Chicken Casserole

YUMM!! I halved this recipe (2 people, 2 days of dinner) I added some more seasonings and cut down on the velveeta, it was delicious. Also I recommend adding a crumbly topping, I used seasoned bread crumbs, almonds & butter!

SOOO goood and easy! Who knew? I will be making this regularly im sure as my man and his son really loved it, as did i!! I even used Soy milk for my bfs sensitive stomach! A+++ Must try! OH I also used Cinnamon sticks and soaked them with the rice water, no cinnamon probs that way!

Banana Oat Muffins

Yummers. Okay made a couple tweaks and they turned out great! One thing I find to be important with muffins are the tops, this tweaked version resulted in beautiful perfectly risen tops! #1 used 1/4 c sour cream then adjusted the milk to 1/2 c. #2 Used 1/2 white sugar and 1/2 Brown...which I think may have resulted in a slightly less sweet muffin but with my #3 change ADDING CHOCOLATE CHIPS the sweet factor was perfect! Not too sweet, perfect for breakfast, yet sweet enough to satisfy a dessert craving! My BF loved the oatmeal in them he said the texture was great, and I agree!

Bread Machine Bagels

YUM!! I basically followed the directions with the exception that I added a tbsp of baking soda and a tbsp of sugar to the boiling water. I also dunked em in an ice bath after boiling (after reading various articles on the topic on the web including the one here on allrecipes). Oh and no bread machine here I used my Kitchen Aid mixer and dissolved the yeast in the warm water with the sugar prior to adding salt and flour. Although to me they should have been a bit denser they were delicious, chewy and soft and I will for sure make again. I only got 9 sorta smaller bagels, next time I will try 6-7 bagels.

Spinach Tomato Tortellini

Really good and simple. I never have heavy cream so I just up'd the milk and added a bit of cream cheese! Itt was really good, oh also had shredded parm and that was good as well, a little extra cheesy factor!

Yummy Sweet Potato Casserole

Sooo goood, everyone loved em, even my bf who swears he dont like no sweet potaters!! :) No more canned for me! I baked mine as well (4 med-large sized yams) It was not too sweet at all, I added nutmeg, cinnamon and pumpkin pie spice!
