Chicken Breasts Pierre
WOW! I was soo pleasantly surprised by this dish. All the different flavors come together so perfectly. My BF Cleaned both his and MY plate, whereas a typical chicken breast dinner may go slightly unfinished as the chicken around here comes from Mutant huge breasted birds. He was raving about this, it was great. Made a few substitutions due to what I had on hand. First off I did not have canned tomatoes, only 2 fresh Roma tomatoes. I boiled quick to get skins off and diced them. I almost did not make it because I found no other reviewers with this substitution but it was MORE THAN FINE!! I added diced onions since i didnt have stewed tom. I also subbed Chicken broth for water. I used the same sauce quantity for only 2 servings of chicken (one HUGE breast butterflied) and I am glad I did. I reduced the amount of chili powder and brown sugar by about 1/2 tsp, it was perfect! Oh and there is always room for an extra clove of garlic in any dish, this one is no exception. I did not dredge in flour either, due to that slimy texture that sometimes happens, I am sure the flour addition is to aid in sauce thickening, but I found that a tsp of cornstarch/water worked just fine to thicken slightly.
Once again I really loved the flavor and it was really simple, quick and easy THIS IS A MUST TRY!! I imagine anyone who rated this badly may have not had the exact ratio of spices right, idk or their tongue needs some practice with delicious FOOD!!!!
