Fish Tacos

Reviewed: Jan. 7, 2009
In a word,YUM.I was a bit leary about the sauce, but it tasted awesome on the taco's.If my five year old says it's awesome than you know it's good. The batter was fantastic.I did catfish since that is something we catch around here and it can taste a bit fishy but with all the yummy flavors of this recipe it was perfect.I topped with some pico and was in fish taco heaven. This is a keeper.

Southern as You Can Get Collard Greens

Reviewed: Oct. 3, 2008
As always,I grew collards for someone else this year and ended up with an abundance.I wanted an authentic southern recipe and this was it.I threw this in the crockpot on low and it is fantastic.I love collards(first time eating em).I will be growing more next year just for this recipe. No sugar was needed as others have said and the smell isn't bad especially I suppose in the crock.

Summer Squash Chicken Alfredo

Reviewed: Jul. 31, 2008
Yum.To do a true review,I used all ingredients.I did throw in the zucchini while the chicken cooked on the stove top so that it would not be mushy just tender. While the chicken was still partially frozen I cubed it. I must admit that this recipe rocks.Even the non zucchini eater in the family gobbled it up.Full of flavor, great way to get zucchin into the little ones diet. Thanks again for the yummy recipe. Also would have been fine w/o almonds.
