Key Lime Cake III

The flavor of this cake is great, but I don't think the liquid measurements are correct. 1 1/3 c. oil and 4 eggs makes the batter very thin. My cakes fell apart as I tried to frost them and I had to make it as a trifle. Also, the frosting should be doubled if you hope to cover the whole cake. Like, I said, the flavor is great, but I would definitely lower the amount of oil and/or eggs.

Dirt Cake I

This cake is always a winner. I omitted the butter based on another review and decreased the sugar to 1/4 cup. I made my cake in a 13x9 pan instead of a deeper bowl. If I make it again in the same pan I will make more of the cream cheese mixture and only use one package of cookies. I have A LOT of crumbs leftover, but I had to stretch the cream cheese mixture to complete the layering. I also used reduced fat Oreos, reduced fat cream cheese, Splenda for baking, and fat free Cool Whip. No one noticed a difference.

Homemade Black Bean Veggie Burgers

Super easy to make and the flavor is great! My patties didn't stay together well but I think it is because I didn't drain the pepper/onion mixture after processing. I used 1/2 tbsp of chipolte powder instead of chili powder. It came out a little spicier but I liked it.

Mediterranean Barley Salad

I really liked this salad! It is hearty without being heavy. Even my husband liked it. I used chicken broth instead of the 2 tbsp of olive oil in the dressing. I also added cooked peas and squash. I will definitely make this again!

Mimi's Zucchini Pie

This was super easy and it came out great. I added spinach to it as well. When you're mixing the ingredients it may look like there is not enough batter, but it bakes up fine. I will definitely make this again. Next time I plan to add feta to the batter too.

Coconut Macaroons III

I made these for a bridal shower and they were a hit! I didn't need to bake mine for as long as the recipe states. That could just be my oven. I suggest checking them after 8-10 minutes just to be sure. Coconut burns fast!

Aunt Betty's Banana Pudding

This dessert was super easy to make and it tasted wonderful. I used fat-free milk, coolwhip and sweetened condensed milk along with red fat sour cream and sugar-free, fat-free pudding mix. You couldn't tell a difference. Will definitely make again.

Mom's Apple Pie I

high ratings for taste and ease. This pie is so simple to make, but you get delicious results. I used Irish Whiskey instead of regular because it was all I had. I don't know if that makes any difference, but it can be substituted.

Easy Eggplant Dish

I used stuffing mix after seeing several other reviews. I thought it was a good recipe. Definitely a nice change from the typical eggplant recipes you see. I will probably add other vegetables in the future.

No Bake Chocolate Oat Bars

These are so easy to make. I think you could use a little less butter and they would still hold together fine. I also added granola to the oatmeal mixture. I liked the extra crunch. I will definitely make these again.
