Toscana Soup
This soup was both easy and DELICIOUS! I used Johnsonville mild ground Italian sausage instead of the links and everyone thought it was great! My picky 11 year old gobbled it up (except for the kale which I made her try) and my even more picky 5 year old ate the broth (he was not having the sausage, potatoes or kale - which I made him try as well)! For those of you with super picky kids, you can understand that this was a giant leap/victory in the quest to get my kids to eat a variety of foods. So thank you, Ken Miller, for this awesome recipe!

Turkey Potato Casserole
This recipe was both easy and delicious! In place of the onions, green beans and mushroom soup, I just used the left over green bean casserole I had in the fridge (being that those are all ingredients found in it anyway). I also used Mild and Sharp Cheddar as well as Colby Jack cheeses - delicious! Although I didn't try it this time, the next time I have it, I'm going to pour my left over turkey gravy on top and see how that tastes! This recipe is definitely a keeper!

Holiday Left-Over Sweet Potato Cake
DELICIOUS! I made the following modifications: decreased the sugar to 1/2 + 1/8 cup due to the fact that my sweet potato casserole already had sugar in it and in the topping which consisted of pecans, brown sugar, butter and cornflakes. Then I used orange juice in place of the beer. When it was done baking (about 35 minutes), I made a glaze using milk and confectioner's (aka powdered) sugar and poured it on top - Oh my taste buds was it GOOD! My husband even ate it and he doesn't normally like anything with sweet potatoes in it! I will definitely be using this recipe year after year! Shared it on facebook too!
