Luau Chicken
I don't normally review recipes when I don't follow them exactly. However, I hope that I might help fellow busy parents out and share the tweaks that I have made to make this a quick weeknight meal. First I seasoned boneless skinless thighs with salt, pepper, garlic powder and onion powder and I put them on the gas grill. In the meantime I made the sauce as stated in the recipe. (added crushed red pepper to taste; used fresh ginger and garlic) I chopped the green pepper, onion and water chestnuts and sauteed all three in olive oil. I mixed the veggies and sauce together and spooned over the grilled chicken. Served with white rice... Quick easy weeknight dinner in a 1/2 an hour.

Grilled Chipotle Marinated Chicken
Very good. I used an entire 12 oz can of chipotle. Instead of a whole cut up chicken, I used boneless skinless breasts and thighs. Since it is winter and didn't want to use the charcoal grill, I broiled it using my gas stove. Turned out great. I can't wait to try them on the grill in the spring. I served along side Poblano stuffed with charizo, shrimp and rice from the food network site. Fabulous dinner.

Lamb Chops with Balsamic Reduction
Made this for dinner tonight. Fabulous. I didn't have shallot so I used red onion since I had it on hand. As the lamb was sitting with the herbs I started reading the reviews...I was getting nervous about only having cheap vinegar on hand. I took the advice of another reviewer and cut the the amount of balsamic that it called for in half. I used some left over Port wine that I had in the fridge for the substitution of the other half. Worked great. I will be making this recipe again. The family loved it including my 4 year old daugher. I won't even go out and buy expensive balsamic now that I know it isn't necessary.
