tunnel of fucge "cake"
My cat, Shadow.
About this Cook
I am back in school. I do not have kids but am the go-to babysitter for my bro and his wife, for my best friend, and work with kids who are severely disabled as a Habilitation Technician. I live with my cat Romeo.
My favorite things to cook
quesodillas, fried rice, tetrazini, pizza... anything I can use left-overs in... biscotti; hot panini sandwiches; chicken, turkey or sheperds's pie; vegetable marinara; bean soup; fruit salad (if that can be called cooking)
My favorite family cooking traditions
traditional Polish food (pierogi, golumpki, pyzy and potato pancakes!! YUM), holiday cookies, dill-ranch oyster crackers, corned beef, broccoli cheese soup, baked sweet potatoes, meat loaf
My cooking triumphs
honey lemonaide, vegetable maranara, tofu masala & tofu parmigana, salad, mock-hollondaise sauce, Alfredo Sauce, molasses & ginger cookies, baked turkey, turkey tetrazini, turkey soup, chicken pie
My cooking tragedies
burned chocolate (EW!)... adding gelatin to whipped cream, without blooming the gelatin first... crunchy "baked" potatoes... very rare poached chicken pieces... crunchy "risotto"... gummy potatoes (hand made gnocchi)...

Basic Quiche by Shelly
My husband made this! he subbed in the remnants of cheese we had in the fridge, used black pepper b/c we had it and did not have white pepper, omitted nutmeg and added broccoli. It was sooooo good.

Zucchini Patties
This recipe was so good! I have a few minor tips to add: 1) use "drained" ziccini (shred it and salt it to remove a lot of water then give it a rinse to remove any surface salt) and do not add extra salt to the batter and 2) use a 1/4 cup measure (or smaller!) or disher to measure out the zuccini-batter as it is very soft and easy to flip/fold over onto itself and a smaller patty flips better.

Basic Biscuits
I used "refined lard" instead of shortening and self-rising flour instead of AP flour + powder + salt... OMG SOOOOOOOOO good. we made biscuits-with-fresh-berries and stew-dumplings. Both were fantastic.
