Ray's Chicken
Against my better judgment I gave this marinade a try, because you never know. Wow, too much acid! I count 5 acids in this marinade. 1.5 cups of acids to 1/3 cup of oil. Not a tasty or pleasant mixture. It did have some elements that where good, it just needed less of the hard stuff.

Chicken Rotini Stovetop Casserole
I used fresh basil and oregano, so I tripled the amount. 1/2 teaspoon of fresh parsley is way too light. In all my years of cooking I have never seen such a small quantity of fresh parsley. So I did 2 tablespoons will maybe 2 1/2. I also waited to put the parsley in, you want the residual heat to cook the parsley just before serving. I know it was good because the leftovers were gone by the next morning.

Spinach Stuffed Chicken Breast
Not a good balance. It needs more cheese and less garlic. The spinach should be wilted in a pan with a little olive oil and salt. The microwave gave it a strange flavor and odor. It was worth a try and a good learning experience.
