Cheesy Ranch Potato Bake

Yum! I seasoned the potatoes with ranch dressing mix (instead of salt/pepper) and chili powder, then only added cheese at the end. Served with sour cream. Definitely making this again!

Irish Soda Bread

Scrumptious! And oh so easy! I was nervous about the sticky dough, but I got rave reviews from my children and the teachers I shared with. When I mixed the dry ingredients, I made sure that the raisins all got individually separated (they tend to clump in the package). When I added the wet ingredients, I used a wooden spoon to gently stir everything just until well blended - no further kneading.

Berry Oatmeal Muffins

Yum. Because of what I had on hand, I used a bag of frozen mixed berries, and a smashed banana to replace some of the oil. Made a great breakfast-to-go that the kids loved.

Sweet, Sticky and Spicy Chicken

The sauce was yummy!! I tossed the chicken in seasoned flour before frying it and I had to use buffalo wing sauce instead of hot sauce because that's what I had. Everyone asked me to make it again, and my Chinese exchange student raved about how good it was. I also tossed in some stir-fry veggies to make it a one-pot meal, served with rice on the side.

Bacon Ranch Pasta Salad

I added spinach and sun-dried tomatoes to make this a BLT salad. I used boxed mac and cheese instead of plain pasta because that's what I had. It was eaten with rave reviews!

Crescent Pizza Pockets

I liked this, my kids liked it, but there is room for improvement. My first problem was making the triangles. I did a double batch and when I tried to do triangle on the first half, I ended up with misshapen balls. So I did the second half as a rectangle and they worked much better. My second problem was related to my first - because of the difficulties in folding the pockets, I couldn't use much sauce. So I ended up with something that tasted like a crescent roll with a touch of tomato and cheese. Not sure how to fix this problem except to perhaps roll out the dough to a larger and thinner rectangle. But it was an easy meal to make that was easy (and not messy because of the light sauce) to eat in the car.

Oven Baked BBQ Ribs

Since I had other chores to do, I put extra sauce on immediately after browning, then covered with foil and put in oven. I added more sauce after 90 minutes and120 minutes. They were probably done after about 2.5 hours, but the family was home in three hours to devour them! Super moist and tender!

Soft Oatmeal Cookies

I very carefully followed this recipe exactly (I usually tend to estimate when I cook) and these came out just as I wished. Perfectly delicious! Even after cooling, they remained soft and yummy!

Wow. This was as easy to make and delicious to eat as everyone says. I did follow another reviewer's suggestion of just placing the dough in the pan and smoothing out the breaks, skipping the rolling. It was gone fast!

Apple Pork Chops and Stuffing

This was as easy as advertised, and delicious, too! I had extra pork chops, so I did one pan with sliced, green apples (skip the processed and over sugared pie filling) and a second one with sliced onion. I made a gravy to with it, but it was perfectly moist.

Grandma Jeanette's Amazing German Red Cabbage

Spot on! The sweet-sour taste may not appeal to everyone, but this tastes exactly as it should. The only change I made was to use the same amount of sugar as vinegar because I prefer a little less sour. This is a very easy way to cook cabbage.

Tomato Zucchini Casserole

Fantastic! Since I had a rectangular pan instead of a square one, I only did one layer. I think with two layers, the cheese would be more oozy in the middle, but it was the flavor was perfect!
