Ground Beef Vegetable Soup

Since this recipe received great reviews, I decided to double the recipe on the first try. I'm glad I did. First, I agree with what everyone said on adding more liquid. I added 2 cups of no sodium beef broth, and it wasn't enough (I didn't have any more room). My soup still came out like a stew. Didn't bother me because it was so tasty. I did some small changes to the original recipe: I sauteed the onions with the beef and substituted the peas & green beans with frozen edamame & frozen cauliflower (hubby doesn't like peas or green beans). Will definitely be making this again.

Baked Omelet Squares

I cut the recipe in half for just my husband and myself. That lasted us 2 days. I added some things suggested by other reviewers and it came out fantastic. I sauteed about 4-5 fresh garlic cloves, 1 red pepper, 1/2 red onion, 1/2 can of no salt added mushrooms, 1 4oz can of mild diced chilis & ground pork sausage in the butter. I then followed the rest of the recipe. I will definitely be making this again. UPDATE: I have made this recipe multiple times. The last time I made it, I used egg whites to reduce the cholesterol. It tasted just as good as the regular eggs. I'll be using egg whites from now on.

Baked Cod with Boursin Herb Cheese

The cheese added a fantastic flavor to the fish. My husband couldn't stop raving about the recipe. The only "change" I did was microwave the cheese for 20 seconds because I didn't have time to let the cheese get to room temperature. It was delicious!

German Pork Chops and Sauerkraut

This was really good. I didn't add the caraway seeds when I tried the recipe. I might try them next time. Two other changes I will be making next time: 1) saute the onions with the pork chops (they didn't cook all the way when baking); 2) reduce the brown sugar to probably 3/4 cup rather than the full cup (it was a bit too sweet). Also a little piece of advice, use a thermometer when baking. I think it maybe cooked 30 minutes.

Grandma's Chicken Noodle Soup

This recipe came out great. I made a couple of changes to reduce the sodium. I used Herb ox sodium free chicken granulated bouillon to make the chicken broth, only used 1 tsp of salt in the broth, added a can of no salt added sliced carrots, sprinkled the chicken (on both sides) with some Mrs. Dash Table Blend and cooked at 350 till it hit 160°. The Mrs. Dash really added a lot of flavor to the broth. When we tried it, we didn't need to add any salt. I will definitely make it again.
