delicious taste, i dipped in melted chocolate. note to self... bake a little longer the first time around, the middle of the log was still undercooked.

Stuffed Chicken Valentino

i loved it, my husband thought it was just ok. i put spinach inside too. the sauce it makes naturally is nice to stir up and laddle on top. goes great with a salad.

Yum. Used 3.5 cups all purpose flour. melted the garlic in the butter with some veg. oil using the microwave. Then used a cast iron skillet to cook them up, brushed them with the garlic butter during flipping.

Poblano Chile Enchiladas a la Gringa

Really yummy., I used plain yogurt with a squeeze of lemon instead of sour cream because i didnt have any. Also, next time will use a sharper cheese, the mozz was nice but didnt have much kick. I added corn too. Note to self: be careful with the peppers next time, my fingers and knuckles are still in pain!

Best recipe found yet, and so simple. don't forget the salt and pepper seasoning, essential for good taste. Heat oil carefully on medium to medium low so not to burn.

Eggplant Parmesan

Really LOVED this dish, the flavor was spectacular! I used 3 garlic cloves, and FRESH sliced mozzarella cheese balls. I salted the eggplant for an hour on both sides before starting the cooking process, this makes it less bitter. Lastly, I served it inside a hot pressed panini sandwich, so delicious! Thanks for the recipe.

Used sherry & cream & herbs de province & better than boulion to flavor the sauce. added mushrooms, pearl onions & potatoes to make it more hearty. loved it!

love it. broiled it in oven, added broiled red onions, alfalfa sprouts, provolone cheese, and served in a herb ciabatta roll. spread with aioli sauce.

Quinoa Pudding

It was good but more like a sweet breakfast food rather than "pudding". I put some maple syrup in mine and used the vailla soy milk. Thank you for sharing, its nice to have an alternative recipe for quinoa.

Cheddar Baked Chicken

omitted the cereal because i didnt have any. The chicken came out crispy on the outside with lots of flavor, and moist on the inside. Instead of cutting in half I pounded the chicken enough to even it out. Loved it, will make it again.

Black Beans and Rice

This is really a nice side dish, I added turmeric powder and juice of 1 small lime. The lime juice is what made it good. I will used leftovers for burritos tomorrow.

Mediterranean Puff Pastry Chicken

I didn't marinade, didn't have the time. It came out great! I forgot the pesto to, I was in a hurry, made this so quickly it was nice and easy. Used only 1 chicken breast, cut it in half so it was thinner, then again the other way so i had 4 smaller pieces. I made 4 smaller sized puffs. Served with steamed veggies. yummy, will make again.
