Restaurant-Style Zuppa Toscana

I used 4 oz of Italian sausage that I had browned ahead of time, instead of 16 oz of smoked sausage. I also sauteed the onion without the bacon fat. (I used precooked bacon slices that I zapped in the microwave and just added at the end.) I did this to lighten the fat content a little. It was still great! My kids enjoyed it, too!

Vegetarian Tortilla Stew

I did not make a vegetarian version. I doubled the recipe for my family and used red enchilada sauce with the green enchilada sauce to make up the difference in what I had in my pantry. I used chicken broth instead of the vegetable bouillon and real chicken. I added a can of refried beans to help thicken it. Also, I did not put the tortillas in the stew. Instead, I fried tortilla strips in canola oil and we topped our stew with them to add a crunchy texture. Very good!

Allison's Pasta Salad

This recipe is excellent! My family raved about it the whole time we were eating it. It's a good mix of flavors with the grapes, dressing, and meat and cheese.
