Cheesy Amish Breakfast Casserole

This is really good! For potatoes, I cut red potatoes w/ skin on into small cubes and sauteed til just slightly fork tender, in a small amount of some reserved bacon fat but w/ lid on pan to steam them so I didn't have to use too much grease to cook them. (I make 1 1/2 times recipe so had 6 cups of cube potatoes) Precooked the potatoes, cooked the bacon and onion the day before and then just added the eggs and cheese the day I made it. I also used 2 -10 oz frozen chopped spinach, defrosted and water squeezed out thru colander, then added to the egg mixture. 1 1/2 X the recipe w/ fresh cut potatoes and spinach as above filled an 11 X 14 casserole dish and served 16. 350 X 1 hr or so.

Good New Orleans Creole Gumbo

Amazingly delish!! My first time making gumbo. So so good! I substituted olive oil for the bacon fat to make the roux. But then I added 8 small strips of precooked bacon (w/ fat cooked off) chopped up, to the gumbo for flavor. :) I also added three half chicken breasts cut in thirds to the big pot of broth after the roux was added....then shredded them after cooking on low, uncovered, for almost 2 hrs. Also, based on recommendations from others, I decreased the amount of water to 2 qts. Added in the okra, shrimp, and only 1 can of crab meat at the end. Yummmm. Will definitely make this again!

Milk Chocolate Popcorn

Yum!! The first batch I made, I misread the ingredient list and used 1/4 pound of butter...instead of 1/4 c! So it was a little greasy since it was twice the amount needed. Second batch was perfect and yummmmy! I think this could be called PMS Popcorn...the perfect mix of chocolate/salt/crunch! :)

Mini Mexican Quiches

These are delish! I took the advice of several ahead of me...added hot italian turkey sausage (meat from 4 links)...sauteed that the day before w/ some green pepper in place of the chiles. Also..added about 1/4 c parmasean and some coarse ground black pepper to the dough - made the balls the day ahead and refrig overnight. Made 12 in full size muffin pans (instead of 24 minis) sprayed w/ PAM...used the shot glass idea dipped in flour to shape dough into muffin pans - was a great idea! Added 10 mins to bake time since using larger size. Added 2 eggs to filling (so 4 eggs total. They were really good. Will definately do again...trying variety of fillings.
